About this Cook
I have been married for 13 years. I have 4 children, 2 boys 14 and 16 and 2 girls, 6 and 8. I work for a major well known medical insurance company and really enjoy my position. I recently moved my office to the home, which has given me more time and flexibility with the kiddos and experimenting in the kitchen. I am at a comfortable, warm, and happy place in my life!
My favorite things to cook
I love to try almost anything. However I prefer cooking over baking... I am still having troulbe finding the perfect dough recipe, whether it be pie, pizza, or biscuits. Mine never come out the way they are supposed to! :( I also like to create my own recipes using whatever I have on hand. The problem I have is not remembering what I used to make it again or submit to allrecipes.
My favorite family cooking traditions
Our family has many traditions. However, the one that sticks out most relevently to me is Meat Pie (French Canadian Style). We also do steamed clams and clam fritters every reunion. Dynamites is another tradition, it is sort of like a sloppy joe. Crepe pancakes is also a sunday morning tradition. We don't do anything fancy with filling, but you gotta use real maple syrup.
My cooking triumphs
I would say Thanksgiving and Christmas is my favorite times to cook. My husbands mom and aunt used cook the turkey. But when I did the turkey(S) first time in 2003 for the entire family, I was designated at that time to always cook the turkey. My cornbread dressing, mashed potatos, mac and cheese, greens, and homemade cranbury sauce was also a hit and I hear many times that they wish I would just cook the entire meal. Now that I am working from home and have the time, word is Thanksgiving and Christmas is at my house this year!
My cooking tragedies
Bicuits... for some reason, they never come out tall or fluffy, always hard as a rock and dense, even though I follow the recipes to the T.

Spanish Rice II
This was delicisious but from the beginning I knew there would be too much liquid since the can of tomatoes has liquid in it. I reduce the water to 1.5 cups to compensate for the water from the can of tomatoes and it came out PERFECTO! I also added cummin and fresh celantro. YUMMO!!!

Vegetable Dill Dip
Delicious!!!! FYI--- to those that couldn't find Beau Monde...try a Randalls/Tom Thumb in the spice section. Made by Spice Islands. Nothing like the REAL thing!!!

Baked Ziti I
I was planning on making lasagna when I realized I had no lasagna noodles. I had all ingredients on hand and this was Perfect! I will probably make this instead of lasagna going forward, it is an easy and delicious alternative. Mix sauce with noodles BEFORE the layering process. Another tip is to use more sauce then called for. Naturally some of it will dry up even if it is covered. I wasn't sure about the sour cream, but it was delicious, it really made the cheese part of the dish creamy and cheesy. I added ricotta cheese AND fresh baby bella mushrooms. YUMMO!
