Easy OREO Truffles

A few pointers: add about 1-2 tablespoons of shortening to chocolate as it's melting. This keeps it nice and silky smooth, and easier to coat. Also, make sure you mix the cream cheese crumbs & cookies for a WHILE. It should resemble wet dirt. I had no problem with the balls holding shape and I did not have to refrigerate. Finally, I find that this recipe definitely needs some sifted powdered sugar. How much is up to you, but I used about 1/2 cup. Otherwise, the cream cheese flavor overwhelms the cookie sweetness. Overall very good.

Buffalo Chicken Dip

Great flavor, but too hot/spicy for me, and I generally love spicy foods. Next time I will use less hot sauce. Everyone at the party seemed to like it, though. Also I bought a large rotisserie chicken breast and shredded the meat. Can't bring myself to use canned meat. Also subbed 1/2 cup ranch & 1/2 cup bleu cheese dressing for the 1 cup ranch.

Whipping Cream Pound Cake

Very good, basic pound cake, but not quite the recipe I've been looking for. This is a very light, fluffy, simple pound cake with great flavor and just the right amount of sweetness. I have been looking for a denser pound cake recipe like the older ladies at church used to make. This wasn't it, although it was very tasty.

Flavorful Beef Stir-Fry

I'm not sure what happened. I have tried this recipe twice, exactly as written, and both times the sauce turned into a gelatinous blob. The flavor was good but I ended up scraping the sauce out while cooking the beef because it was turning into gelatin. Maybe adding water would've helped? Also I used all fresh veggies and added water chestnuts.

Sesame Beef

Chicken Pot Pie II

Perfect flavor. I like to pour it into a deep dish pie crust, top with another deep dish pie crust, seal edges, and brush egg on top. Great comfort food.

Caramel Snack Mix

I always add unsalted, dry-roasted peanuts to this mix and bake it in a huge turkey roasting pan. When I lay it out for cooling, I use parchment paper, and spread it out as far as possible in a thin layer so I don't end up with huge clumps. Then I put about a cup & a half in sandwich sized ziploc bags for storage, or for giving out. My family absolutely LOVES this recipe. It is the best Chex Mix recipe we have ever tried, far superior to any other.

Fast Chicken Divan

Very tasty. I mixed the pimientos in with the cream of chicken soup. Also used a sleeve of crushed Ritz crackers w/melted butter for the topping instead of bread crumbs. The whole family enjoyed! Thanks for a new recipe!

Easy Chicken Casserole

While I was boiling the chicken, I added a bag of frozen mixed vegetables to the pot(peas, carrots, corn, green beans). I found that this casserole was much better with the addition of the veggies. I also added a can of sliced water chestnuts to the sour cream/soup mixture. Ritz crackers have the best flavor for the topping, but make sure you finish it off with several tablespoons of melted unsalted butter. Or you could just mix the butter in with the bread crumbs. A great, all-in-one, easy & filling meal!

Slow Cooker Beef Stroganoff I

The cream cheese was much tastier than regualar sour cream in this! I also threw in some chopped carrots & red peppers. I found that it did not take 8 hours on low in my slow cooker. More like 5 hours, tops. After that the meat starts getting tough...but that's just my slow cooker. After it was done, I tossed in the cooked egg noodles & mixed all together. It was great - will have again!

Apple Cake III

I followed the directions/ingredients exactly and found this recipe to be just what I was looking for. I used Comstock Apple Pie Filling. Cake was perfectly moist with just enough apple flavor. The streusal topping was perfect, too --- the brown sugar, butter & walnuts caramelized into a wonderfully crunchy mix. Did not taste like cake mix cake to me at all. Very good!

Holiday Pumpkin Bread

Definately a great recipe although I used pecans instead of walnuts, and I left the raisins out. The bread came out very moist and smelled wonderful while baking. However, this bread was just a tad bit too sweet for my liking; next time I will reduce the sugar to maybe 2 3/4 cups instead of 3 cups. Excellent fresh from the oven spread with butter or cream cheese!!

Cream of Tomato Soup

There must be something in the air...I, too, like the previous poster woke up today with a craving for creamy tomato soup, and here I am in NC with scorching summer heat and 105 degree temperatures outside! Anyway, this was great, quick & easy but I had to make a couple of changes...Didn't have onions on hand so I just melted the butter with some dried basil, then whisked in the flour. Next the tomato juice, and finally, instead of 2 cups milk, I substituted 1 cup of heavy whipping cream and 1 cup of milk. This made it extra rich & creamy! Thanks for the quick & satisfying recipe.
