Black Bean and Corn Salad II

Reviewed: Jul. 28, 2006
I really enjoyed this. It was great as a salad, but served it with fajitas, and it was great as a topping! Would also be wonderful as a dip with tortilla chips. I scaled this down to 3 servings, but it still made a ton.

Mom's Sour Cream Chicken

Reviewed: Jul. 28, 2006
I thought this was actually quite bland. My husband liked it, but I would not make it again. I ended up adding a lot of extra pepper, serving it over orzo and sprinkling parmesan cheese on top. It was edible, but nothing I would rave about. Definately tasted more like mustard chicken than sour cream chicken.

Burgundy Pork Tenderloin

Reviewed: Jul. 11, 2006
I was suprised at good this actually was. When I got it out of the oven, it did not look very appetizing, but looked much better when it was sliced. The gravy also did not look very appetizing because of the color, but once again, tasted quite good. I scaled the recipe down because my tenderloin was 1 1/2 lbs, but still used the whole gravy mix.

Chicken and Mushroom Saute

Reviewed: Jul. 10, 2006
The chicken is super moist and tender with this recipe. The only problem I had was thickening the sauce. I made it as directed the first time (except for adding fresh mushrooms instead of canned) and it never thickened. I threw it out and tried again with milk instead of water, which worked a little better, but not the "gravy" consistency I was looking for. But it still tasted excellent and we ate it all! Served it over fettucini we had left over in the fridge.

Bob's Mexican Stuffed Chicken

Reviewed: Jun. 21, 2006
I made this awhile ago, and forgot to rate it!! I thought this was just ok. I had a hard time "stuffing" the chicken, and had a lot of filling left over. Maybe I did something wrong, since no one else seems to have had that problem. It was good enough to eat, but not something that I will crave to make again.

Ginger Glazed Mahi Mahi

Reviewed: Jun. 8, 2006
I would rate this 4 1/2 stars if I could. It was very tasty! My husband is not a big ginger fan, so I was afraid he would hate it, but he absolutely loved it! I will definately make this again. Really easy and pretty fast. Not bad for a weeknight meal, but fancy enough to even make for company! I just used the frozen mahi mahi filets that you can get at Costco and it worked perfectly.

Sauteed Garlic Asparagus

Reviewed: Jun. 8, 2006
This was not as flavorful as I had hoped for. I only cooked mine for the 10 minutes it said in the recipe, but the asparagus was overcooked for my taste. It was extremely easy and fast, but quite plain to me.

Baked Ziti III

Reviewed: Jun. 1, 2006
This was really tasty and really easy. I did not add the parmesan or basil (I didn't have either on hand) but just added shredded mozzarella to the top. A really quick fix as well, besides the 30 minutes it takes to bake. Great for a weeknight.

Easy Decadent Truffles

Reviewed: Feb. 14, 2006
These taste amazing. They are very simple to make, although rolling them into balls is a little bit time consuming. I was hoping to get 60 out of the batch, but only ended up with about 45. I followed the advice of others and used 2 c. powdered sugar and 2 c. chocolate chips. I also used milk chocolate chips as I prefer the milk chocolate. I split it into 3 and did mint flavoring, rolled in powdered sugar, almond flavoring rolled in chopped almonds, and coconut flavoring rolled in coconut. I can't decide which is my favorite! I did have to leave it in the frige for an hour (I probably would have let it stay in there longer if I had the time.)

Beef and Bean Chimichangas

Reviewed: Feb. 14, 2006
I was hoping these would be a little bit crispier, but I guess frying is the only way to get the crispiness you expect from chimichangas. The taste was good, I followed the recipe except I omitted the green pepper because I did not have one, and I used pepper jack cheese to give it a little zing. The leftovers look a little soggy, but I will try one today for lunch to see how it is. Overall, a decent weeknight meal.

Shrimp and Crab Enchiladas

Reviewed: Jan. 30, 2006
I neither loved nor hated these. They were just ok. I added the 8 oz. of sour cream to the filling because I thought there was not enough substance to it. I'm glad I did. I ended up serving with more sour cream to top them with. I filled 10 tortillas, but should have only done 5. They were mostly tortilla, not a lot of filling. I used salad shrimp, which worked out perfectly. I sauteed the shrimp and crab in olive oil and garlic for a moment before filling the tortillas.

Cavatini II

Reviewed: Jan. 28, 2006
Very tasty. It took quite awhile, and I'm not sure I would make it very often because of that, but it was good. It tasted like something you would get as a side dish at a pizza place, but it was definately filling enough to eat as the main dish.

Southern Living Magazine's Chicken-Fried Steak

Reviewed: Jan. 26, 2006
This was really good! Great comfort food. I wouldn't go as far to say that it is as good as restaurant quality (maybe if I had a deep fryer), but it was quite tasty. The only problem I had was that the coating stuck to the bottom of the pan on the second side. I didn't measure the oil, and maybe I didn't put enough in...that could be my problem. I made the gravy as well, and it took well under 10-12 minutes to thicken up. Probably only 6 or 7.

Chicken Divan

Reviewed: Jan. 25, 2006
I only made one change to this recipe - I did 1/2 c mayonnaise and 1/2 c sour cream because I am not a big fan of the mayonnaise taste. I served this over rice. I would have given this 3 stars because it was just OK to me, but my husband ate leftovers without the rice and he said it was much better.

Manicotti Alla Romana

Reviewed: Jan. 23, 2006
YUMMY!!! These were wonderful. Although they did take a long time to make, I was prepared from reading other's reviews. They were totally worth the time they took to make!! Even though they took a lot of time, they were fairly simple to make. I used my hands to stuff the manicotti, which worked great (but a little messy!) I will definately put this on my list to make again. I followed the recipe exactly, except I used beef granules instead of the the chicken because that is all I had. YUM, YUM!!

Pork Tenderloin with Mustard Sauce

Reviewed: Jan. 21, 2006
This was super easy and tasted great. The marinade was perfect. I marinated the tenderloin about 20 hours, but it turned out perfectly. Not so strong that you couldn't taste the pork, but it added a great flavor. Very simple, yet elegant.

Roast Potatoes

Reviewed: Jan. 21, 2006
I used olive oil, and didn't really measure any of the ingredients, but these turned out fantastic. I had to cook them longer (about 40 minutes). They were simple, yet a perfect addition to the meal. I served them with the pork tenderloin with mustard sauce from this site.

Chicken Balsamic

Reviewed: Jan. 17, 2006
I wasn't very impressed by this recipe. I marinated the chicken for about 4 hours, but it still wasn't very flavorful. My husband loved it, but then again, he smothered his in bbq sauce. I love Balsamic vinegar, so maybe the recipe just needs some tweaking.

Pesto Chicken Florentine

Reviewed: Jan. 11, 2006
I don't give 5 stars unless something is incredible, and this recipe is not only incredible, but it is very easy and looks beautiful! This tastes like something you would get at an Italian restaurant. I put in about twice as much spinach as the recipe called for because I like spinach, but besides that, I followed the recipe as written. I will DEFINATELY be keeping this recipe!

Cheesy Pork Chop Casserole

Reviewed: Jan. 9, 2006
This was actually really good! My husband says that all I ever make is chicken, so I have been trying to branch out. I was very happy with this recipe and my husband loved it. Will be making it again soon. I used hash browns that I had in the freezer which made the recipe really easy and the potatoes cooked perfectly.
