Dark Chocolate Cherry Fudge

Very easy to make fudge. I boiled for exactly 5 minutes. My family didn't like the cherries but it was still good and I would make it again without the cherries.

Almond Macaroons II

This was my first attempt at macaroons and now I am hooked. You do not want to drop these by heaping teaspoons though or you will end up with large macaroons. A piping bag would be better and then you can better control size. Room temp egg whites are a must when trying to whip them into stiff peaks.

Spicy White Chili with Chicken

Made as directed with minor alterations....used roasted Hatch green chile I had in my freezer from the season this year,frozen corn and homemade chicken broth. I also used the optional seeded jalapeno and this was spicy! After initial tasting I went back and added 8oz of cream cheese to attempt to cool things down a bit and give the chili the creamy factor I was looking for. It helped some and this will be something I make again.

Cheese Mexican Corn Spoon Bread

My family loved this! I doubled the recipe and made a minor tweak and a substitution. I used ground turkey instead of beef due to food allergies. I also used roasted Hatch chile that I had frozen from when they were in season (I used 3-4)instead of canned. We love Hatch green chile around here:) I used cheddar- jack cheese because that is what I had on hand but I added more than 4TB to the top. I used about a cup instead. 4Tb (the doubled amount) just did not look like enough.

Jumbo Dark Chocolate Cookies

I should have headed the cautions of the cookie being too salty but I didn't since I typically like the salt and chocolate pairings but in this cookie it was too much. Unsalted butter needs to used or Salted butter and 1/2tsp of salt omitted. My family on the other hand didn't mind the saltiness and gobbled these cookies up. I did chill the dough but found it was a mistake or rather I let it chill for too long and the dough become too hard to scoop with a cookie scoop so I had to let it soften some. I made these smaller cookies as well and baked for 13-14minutes.

White Chip Orange Cookies

As is these cookies do not have enough orange flavor for our personal preference but they are still good. I added a splash of organic orange extract, a splash of vanilla (I cannot make a cookie without vanilla)and the juice of a orange. I chilled the dough before baking. Plus I probably had a full tablespoon of zest and these were perfect for us.

Moist and Savory Stuffing

This was ok. My family didn't really like it but we aren't big fans of "box/bag" stuffing. I did cook the onion and celery with butter first out of habit.

Easy to follow directions to a beautiful delicious desert. I did add a few other spices (cloves and nutmeg) but I am sure this would have been just as good without.

Individual Pumpkin Pies

These were ok but not spectacular. My vanilla wafers turned into soggy things that disappeared into the pies. Would have preferred some sort of crust (my husband's big complaint). I also had to give these extra cooking time.

Chicken and Corn Chowder

I used a whole red pepper, doubled the onion and used 4 cloves of garlic. I used sea salt and fresh ground pepper and 2 cups of sharp cheddar cheese. The flavor was perfect. The problem was the soup didn't thicken as expected we wished it was thicker like a chowder but this worked.If I make this again I would also add potatoes.
