Grilled Turkey Cuban Sandwiches

These were a huge hit with my family and everyone loved them! These sandwiches have made it into our regular dinner rotation. I did use my George Foreman Grill to grill the sandwiches.

Boiled Chicken

Cheesy Chicken and Yellow Rice

Quick and Easy meal. My kids helped me make it and 3 out of 4 liked it. My husband said this would be something good for lunches during the week. I did sub an orange bell pepper over green because that is what I had on hand but no other substitutions or additions were made.

Chipotle Cheeseburger

These were a winner in our house and everyone loved them including my picky eater. I did make some minor changes. I used ground turkey instead of beef. I also used fresh garlic instead of the minced and dried cilantro since I could not find fresh cilantro locally. I did not have any issues with the meat mixture falling apart but I did not cook these on a grill but an electric skillet. I am normally a mayo hater but i really liked the chipotle mayo. It really added to the burger.

JELL-O Patriotic Mini Fruit Tarts

I made these with my son and they are very easy to make. I did use homemade pie crust. Phyllo and Puff Pastry would work well as the crust as well. We also used strawberries instead of blueberries and raspberries simply because the ones at the store didn't look good. They were so good my son wanted to eat them all. THis recipe is versatile and could be made with other pudding flavors and fruits and toppings.

HERDEZ® Creamy Pasilla Enchiladas

Unfortunately these were not a big hit in my house. They were ok but not out of this world. The filling mix was missing something but my entire family couldn't name what. The corn was a unique addition. After 4 years in El Paso and the southwest I don't think I ever saw corn in an enchilada. The sauce mixture could also stand to be doubled. My entire family agreed it could use more.

Mayan Couscous

This is a good base for a black bean and couscous salad. I used less salt (too taste) added more garlic,cumin and lime juice and felt it was still missing something. Some red bell pepper would be a good addition.

Pollo Bianco

This was ok nothing extra special. I will be moving soon and was looking for ways to use the chicken thighs in my deep freezer. I made the recipe as stated. There were enough onions for my husband and myself but thankfully my kids are picky eaters so we didn't need more of the sauce. If I were to make this for others I would increase the onions and add in some more seasonings like garlic.

Cheeseburger Meatloaf

I made this as written but with Johnsonville Hot Italian Sausage instead of ground beef. It was pretty tasty and my kids loved the oozy gooey cheese in the middle. I did use the jelly roll method and had no issues making the loaf. Now cutting it was a different story. Even after allowing to sit for 15 minutes or so the cheese still oozed when cut. Especially the center of the loaf. It was greasy but I think that is to be expected with sausage.

Italian Wedding Soup

Very easy to make soup and recipe can be converted for the crockpot. I made my own chicken broth instead of using canned. Baked my meatballs at 350 for 20 minutes and then added to the crock pot. About 2 hours before eating added orzo to the crockpot (on warm) . Before serving I stirred in baby spinach. Since I was using baby spinach I did not chop it up.

Bowties with Italian Sausage in a Cream Basil Sauce

Although I made some alterations I did not change the core of the recipe and this was a family approved recipe. I used ground hot sausage instead of sweet out of family preference. I used heavy cream because that is what I could find. Penne instead of bow ties because I did not realize I was out. I used canned tomatoes instead of fresh but when reading the directions it sounds like either fresh or canned could be used. Lastly dried basil instead of fresh because I could not find any locally. Fresh basil would have been better but it was still a tasty sauce with the dried.

Easy Sweet Potato Casserole

If you like your sweet potatoes sugary and cinnamon-y this is recipe for you... my daughter and I do so we liked it but more so without the marshmallows. *I did reduce the serving size to 2 to make the recipe... my boys do not like sweet potatoes and I didn't need 10 servings.*

Fresh Strawberry Coffee Cake

Very simple and easy coffee cake to make. Produces a nice moist and dense cake. I preferred the cake cold but it is good warm as well. I omitted the coconut due to food allergy.

Casey and Leigh's Delightful Fruit Dip

My daughter and I enjoyed this fruit dip. I used Chobani Vanilla Greek yogurt and did not have any issues with having a runny dip. The recipe also worked perfectly with reduced fat cream cheese. I skipped the food coloring.

Healthier Classic Peanut Butter Cookies

My kid's liked these but not enough to make a whole batch of cookies disappear in a day like usual cookie recipes. I didn't really like them...the flavor was off to me. They also spread while baking. They were a nice chewy cookie but that is about it. I ended with 3 dozen and 4 cookies using my cookie scoop. I would look into alternate ways to make a peanut butter cookie healthy such as using whole wheat flour, reducing the amount of sugar etc. in the future.

Spaghetti Squash Hash Browns

My daughter and I loved these. I agree with others these are not a hashbrown but more of a potato pancake. I used squash that I had already cooked. I made sure to drain any excess water. Mixed and measured patties with my 1/4 cup as written. My patties were thinner than an inch thick.They fried up quickly and were best while still hot. We ate them plain seasoned with only salt and pepper simply because I did not realize I was out of sour cream. These are a great base recipe... they are good plain but would be great with other flavor additions.
