Caramel Corn Treat Bags

What is better than addictive caramel corn? Caramel corn made with treats in it. This was a big hit among the kiddos. Made the recipe as written, it was easy peasy:)

Chicken and Corn Chowder

I used a whole red pepper, doubled the onion and used 4 cloves of garlic. I used sea salt and fresh ground pepper and 2 cups of sharp cheddar cheese. The flavor was perfect. The problem was the soup didn't thicken as expected we wished it was thicker like a chowder but this worked.If I make this again I would also add potatoes.

Another case of a good base but needs (a lot) more help. I made the recipe as written except I used linguine instead of fettuccine. We thought it was pretty bland. It is not something I would serve guests.

I made recipe as written with no tweaks. As is this recipe was not a winner in my house. It works as a base but it needs help to make it something good. I doubt I would make it again but if I did I would add garlic, onion, pepper and other seasonings to give it better flavor and hide the from a can taste.

Pulled Chicken Sandwiches

This recipe get's points because all 4 of my kids ate it without complaining but that said my husband and I did not like this. In fact I was told not to make it again. The sauce is bland and needs some help. It is a good base but that is about it. With doctoring up this could be a lot better.

Delicious Cinnamon Baked Apples

These did not turn out as I was hoping. The sugars did not caramelize to make a syrup for the apples. I did stir the apples at 30 minutes before adding water. Stirred again and baked longer in hopes of that yummy syrup but no luck.If I made this again I would reduce the nutmeg to 1/2tsp as it can be can be overpowering. I would also cut the cinnamon in half or just to 1tsp. All of the spices also left a powdery texture:/ I used half Granny Smith half Fuji apples.

Moist Chocolate Muffins

Pretty good muffin, good chocolate flavor. My family and I liked it but my husband and I agreed it was a bit dry and needs to be more moist. I ended up with 18 muffins and baked for 17-18minutes.

Rich Peanut Butter Brownies

I really hate giving recipes bad reviews but ...It has more of a cookie texture and is a bit dry. When making the batter it reminded me of cookie batter and I had to pat it into the pan evenly... it did not pour and spread. For the chocolate flavor you do need to add a bit more cocoa powder as suggested also.This was not a hit for my family.

Kelley's Peach Cobbler

I reduced recipe to two servings (with Allrecipes calculator) and used fresh peaches over frozen since they are in season. It baked up beautifully but the butter and sugar bubbled up until I took it out of the oven. If I made again I would reduce the amount of butter, it is a bit much. Adding cinnamon and nutmeg would be a nice addition to although it is tasty without it. My husband really enjoyed this too.

Zippy Egg Salad

This wasn't bad but it wasn't good, definitely different. I think the soy sauce is out of place in this and was throwing me off. If I made this again I would omit it. I did not add salt due to the soy sauce. I did like the zip from the red pepper. I think with tweaking this could be good.

Hide the Veggies Please! Summer Squash and Zucchini Corn Casserole

I got my picky eater to eat zucchini and squash,lol. I did shred the squash and red onion instead of chopping. I would omit the sugar in the future, it really isn't needed and use fresh garlic instead of garlic powder.

Cheesy Potato Cakes

We were disappointed in these but with alterations these could be good. As written the potato pancakes were bland and are in definite need of flavor. I would add onion and garlic. They were crispy on the outside and doughy in the middle. An egg may help or reducing the amount of flour.
