Whole Grain Linguine with Roasted Peppers

This was ok but will not be a repeat. I had no issues with roasting the peppers or putting the recipe together in general. I did use gf spaghetti instead of linguine. My issue is the flavor or more so lack of flavor. It was hints of garlic and roasted pepper but the primary flavor was the pasta. With some tweaking this could be perfect but as is it needs some help.

Healthy "Italian Mac and Cheese" with Carrot Puree

My family loved this mac and cheese! I made the recipe as written except I used gluten free macaroni and it turned out perfect. There was a hint of carrots but my family had no clue.

Maple Buttercream Frosting

This frosting is just like the description says, it is a very sweet frosting. A little goes a long way. I wouldn't suggest piping on cupcakes like I did. I think this would be good smeared on top of cinnamon rolls.

Yummy Pecan Pralines

These were very easy to make. I tweaked the recipe based on the reviews and they really made the recipe. I used Heavy Cream instead of evaporated milk, upped the pecans to 2 cups, upped the vanilla to 1tsp and added 1/2tsp os sea salt. These tasted just like some pralines I bought in Atlanta. I will be making these for Christmas gifts!

Triple Citrus Cupcakes

I converted this recipe to gluten free with GF flour blend and xantham gum. My only gripe is the frosting. I added milk (a tablespoon at a time) instead of extra juice to get a spreadable consistency. The amount of frosting made was not enough to pipe or even frost to look like AR's photo above. The frosting is good but I would double the recipe if I were to make it again. Overall it is a pretty tasty cake and my family enjoyed it.

Crispy Chipotle Roasted Smashed Potatoes

These are my families new favorite potatoes! I used a mini food processor instead of a blender with no issues. You just need to slowly add the oil a little at a time. I also used a silicone brush to make sure potatoes were well coated.

Upside-Down Double Apple Coffee Cake

After reading the other reviews I made this recipe with tweaks to help it turn out better. I use applesauce in baking quite a bit and my first reaction was the proportion were off. I reduced the apple sauce to 1/4 cup..I also made this gluten free by using gluten free flour and 1tsp xantham gum. My other tweaks were too add 2t of baking powder,1/2t salt, 1t vanilla and 1/2cup greek yogurt. I also upped the cinnamon to a full teaspoon and added a teaspoon to the brown sugar and apple mix. I did have to bake the cake longer with the tweaks.

Chocolate Applesauce Pudding

Curiosity got to me so I made this recipe. My second son said he wanted to try it and he was the only person who liked it. The texture was off and it tasted like chocolate pudding and apple sauce mixed together.

Hamburger Steak with Onions and Gravy

Great recipe! I used Johnsonville Italian Sausage in the place of hamburger which gave this recipe a nice bangers and mash like flavor. I also used chicken broth instead of beef (due to allergy) and rice flour instead of all purpose to make it gluten free. I skipped the sherry all together like some other reviewers and did not miss it.

Johnsonville Sausage Balls

This is a very easy and versatile recipe. My kid's are weird about onions and mushrooms so I used chiffoned spinach instead. I also use GF bisquick with no problems. These turned out great and disappeared fast!

Best-Ever Pumpkin Cupcakes

If you are looking for a pumpkin CAKE this is NOT it. I made the recipe as written and hoped for the best. I thought there may have been an error with the recipe. When my husband bit into his he immediately said, these cupcakes aren't done... but they were done. This is a pumpkin pie like "cupcake" that is seen all over pinterest during the fall months. It is good but it is not cake like and there is nothing noting that this is not your typical pumpkin cake. The flavors of pumpkin pie are all there.

Banana Nut Bread by PAM®

If you are looking for a banana bread that isn't too sweet this is the recipe for you. Many breads are simply too sweet but this one has a good ratio of sweet to balance with the banana. I did make the recipe with gluten free all purpose flour, xantham gum, a full teaspoon of cinnamon and 2 eggs instead of egg beaters.

Healthy Multigrain Chia Waffles

I made these almost as written.... I was out of almond milk so I used regular ole 2% milk. My family devoured them and wanted more. The recipe only made 7 waffles so for large families like mine the recipe would need doubled.

Cherry Salad

I made the recipe as written but we did not like it. It is very sweet. This may be good as a filling for a freezer pie or even as a sweet dip for graham crackers or cookies but alone , not so much. By itself it needs something to balance the sweetness.

Oven BBQ Chicken Drumsticks

After reading other reviews I omitted the water completely. I did not have Worcestershire sauce so I just added some onion powder, garlic powder and pepper. I also added some cayenne. I baked for 30 minutes covered, flipped and ladled sauce onto of chicken and then 30 minutes uncovered. The sauce never thickened up and was very soupy. Before serving I ladled more sauce on top of drumsticks. My family loved the chicken and it was very moist and juicy/ fall off the bone. Just wish the sauce would have thickened up.

Roast Sticky Chicken-Rotisserie Style

I had a whole chicken in my deep freezer and decided this morning I should make it in my rotisserie. I needed a rub though and found this recipe. I made it as written with the exception of the white pepper. I did not have any so I omitted it. My family loved the chicken and this will be my go to recipe.

Pink Lemonade Pie from EAGLE BRAND®

I was in search of the pink lemonade pie I had growing up and this came pretty close. I made a shortbread gluten free cookie crust using the butter cookie crust recipe here on AR. I made it as a 9x13 instead of "pie". I also used a full tub of "cool whip" instead of half. I placed it in the freezer to firm up. I pulled it out of my deep freezer about 30 minutes prior to serving. I skipped the coconut because i'm allergic.
