Red, White, and Blueberry Fruit Salad

Very simple fruit salad. 1/2 cup of sugar is a bit much though. Half is more than enough or even a drizzle of honey.

Good base recipe. I agree with others that the extra salt to taste is unnecessary since you are using season salt. I used boneless/skinless Chicken breast and made nuggets my kids devoured.

Extra-Yummy Fluffy Pancakes

Yummy Pancakes and they passed the kid test but the recipe calls for too much cinnamon. I did cut this to 2tsp and felt I could have used less. They are nice and fluffy pancakes that melt in your mouth.

Mexican Rice II

This is my go to mexican rice recipe. My kids devour it but after several times making this recipe I have made a few alterations. I use fresh crushed garlic, sea salt and up the cumin and add chili powder.

Chicken Nachos

These were yummylicious:) I made the mistake of using Queso Fresco for the cheese not realizing it didn't melt but they were still good. Kid's loved them. I will make again with a cheese that melts. I also added lime juice when they were done baking.

Quick and Easy Refried Beans

3 out of 4 of my kid's liked these. We used them to make bean burrito's. By themselves they need something more to flavor but when paired with something (like in the burritos) they were ok. They were a little on the dry side also but I drained and rinsed my beans since the recipe did not specify if they needed to be drained or not.

My younger 2 kids loved this and I think my youngest son is addicted to Al Fresco now. This was a quick and easy dish. I did make my own polenta instead of storebought.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

Made minor alteration based on personal preference. Used fresh basil instead of oregano, plain canned tomatoes instead of seasoned and omitted the red wine . Added 1TB sugar to cut the acidity from the tomatoes. Used whole wheat linguine also. We loved it.

Sweet Apple Chicken Sausage, Endive, & Blueberry Salad with Toasted Pecans

A nice light salad. I couldn't find endive so I omitted it and used Feta instead of Goat Cheese (again couldn't find it). The dressing is perfect in my opinion but I felt the salad would be better without cheese or the sausage. The Al Fresco Apple Sausage was good but I thought it would be better in something else.

Fiber One® Chocolate-Peanut Butter Haystacks

Yummy in our tummies! My kids love haystacks but I usually don't make them because of having to use chow mein noodles, they're just not that nutritious. Now I can be sneaky mommy and use Fiber One and my kids can get a yummy treat that is good for them. I made the recipe as written and had no issues:) I will make again with butterscotch chips and may add in some nuts as well.

Sweet Pork for Burritos

Sweet this is, too sweet for this prediabetic. I did goof and did not read the directions and dumped all the ingredients together and cooked the pork in that. When I realized my goof I did take out the salsa and chili's and run through the food processor, then shredded the pork combined the two and added back to the liquid and left on warm until we were ready to eat. All 4 of my kids devoured this but they preferred it on a roll instead of a tortilla. It was a bit too sweet for me though.

Green Chili and Corn Dip

This recipe needs a lot of help. I used fresh roma tomatoes since the recipe did not specify canned or not. I also used fresh hatch green chili also, that I sauteed until skin started to brown. I then added tomatoes and corn. I increased corn to 1/2 cup. I then used 1 cup milk (I did start at 1/4 cup but it was pasty and added more to get a good consistency) to 1/4 cup flour and cooked until thickened and then added 8oz cheese. If you like things extra cheezy add the other 8oz. I then tasted the dip and it was pretty bland so I added, onion powder, garlic powder, cayenne pepper and fresh ground pepper. Fresh cilantro would be a good addition also.

Sweet and Salty Toll House® Cookies

My kid's loved these... me not as much. I love the chocolate and salt combo but these were lacking the oomph from the salt for me. I did chill the dough before baking and made minor adjustments due to high altitude baking.

Original NESTLE® TOLL HOUSE® Dark Chocolate Chip Cookies

These were yummy in my tummy! Love the dark chocolate! I did use the full bag of chips (as suggested by others to add more) and I chill my cookie dough at least an hour before baking.

Beef and Bean Crescent Burritos

Zesty Italian Crescent Casserole

It's rare for me to make something all 4 of my kids like, rarer for me to get my oldest to eat something with tomato sauce but he had 2 pieces. I did make this with ground turkey due to a beef allergy and used my own pasta sauce. I forgot the parm on top but it was fine without it:)

Chocolate Peppermint Meringue Drops

Out of this World Pasta Salad

This is a good base for a pasta salad but it needs some help. It is a bit on the bland side. Cutting the veggies into shapes is a nice touch for special occasions but a simple dice is just fine for everyday. I chopped our carrot instead of diced as well. Alike others I could not find the alien broccoli so used regular florets. I have made a ranch pasta salad similar to this in the past when I needed something last minute, tomato, cheddar cheese, red onion, bacon, chicken along with a few seasonings to add to oomph it up can turn this salad from eh to yum!
