About this Cook
Hello All:) I am a Army wife, mom to 4, volunteer and jack of all trades. Well maybe not all but I try. I love to cook and bake and take pictures of what I make. It all helps me de-stress. I am a foodie and love food and trying out new things.
My favorite things to cook
Do I have to pick one thing as my favorite? It really depends on my mood some days it is cooking up a scrumptious dinner while the next it is baking cupcakes.
My favorite family cooking traditions
From big breakfasts on the weekends to holiday meals food is a big part of so many things in my families life. It brings us together. We work together creating meals just as we sit together when we eat.
My cooking triumphs
Nothing feels better than cooking a new recipe that turns out perfect and that my entire family loves. The harder the recipe the better it feels. I can also make some awesome cupcakes and other baked goods. I was the cupcake lady at my kid's school and make cupcakes that the kids actually eat.
My cooking tragedies
Just keep me away from box mac n cheese or ramen noodles. It isn't a pretty sight.

Sweet and Spicy Salmon with Grapefruit Salsa
This review is mainly for the rub, it was very good on chicken. If I could eat Salmon I am sure it would have been goon on that as well. Do to medication interactions I could not use grapefruit so I subbed with cucumber instead. I also used red onion instead of green onions because I forgot the green onions. I added a bit of garlic salt and lime to the salsa after initially tasting the salsa and it was perfect. It paired well with the chicken.

Pork Carnitas with Cilantro Tomatillo Sauce
I made this making a few changes. The biggest was I made this in the crockpot using a just over 3lb pork loin roast cooking for 6 hours on low. I also used chipotle sauce instead of ground chipotle pepper as another reviewer suggested. For the Tomatillo sauce I added the juice of half a lime and couple dashes of garlic salt after trying the sauce as written. I prepared the "sauce" in my hand food processor. I served on warmed corn or flour tortillas and my family enjoyed it.

RITZ Country Fried Ribs with Zesty Buttermilk Ranch Dressing, created by Dinosaur Bar-B-Que
My family enjoyed these ribs but I did make a couple minor changes. Instead of dusting with Cajun seasoning after frying I added Cajun seasoning to the Ritz cracker crumb mix. I also used a homemade Cajun seasoning (Simple Cajun Seasoning here on AR) instead of store-bought. The ranch dressing was a favorite of mine and my husband and turned out great using the homemade cajun seasoning.
