Lemony Quinoa

I liked this recipe. I am always looking for new ways to prepare quinoa, and this one was different and tasty. One comment, however: quinoa is actually a seed, not a grain. Just like to keep things accurate!

Barbecued Shrimp

I don't know what I did wrong, but my sauce turned out black, oily and bitter. I discarded it and made my own sauce with some red wine vinegar, hot sauce, spices and a touch of bottled barbecue sauce. Turned out fine, but this recipe seems ridiculous with using so many different pots and 2 cooking methods.

Baked Apricot Chicken

This was good, but the sauce seemed a little runny. However, it was very easy and a nice change from the typical chicken dish. If you like a slightly sweet, tangy sauce with your chicken, you'll like this. A good addition might be some serano or habanero chile peppers to kick it up a notch.

Smoked Salmon Pizette

This was a very interesting dish. Not what we would typically make but it was pretty good. We used salmon we had bought fresh and smoked at home. Yum! If you are a somewhat adventurous cook and eater, it is definitely worth a try!

Santa Fe Soup

Very easy and tasty. Mu husband made it and it was really good. He said it was very simple to make - just cook the beef and then throw it all in the pot to simmer. We had it with salad to make give us some nice crunchy green stuff along with the chunk, creamy soup.

Cajun Chicken Pasta

This was good. We always like a little extra added spice, but did enjoy the blend of flavors in this dish. How can it go wrong? Chicken, cream, cheese, spices, and pasta? Yum!

Easy Roasted Pork

This is good and very easy, although after trying it as written the first time, we added some cayenne pepper the 2nd time. Added a little zing. Some hot sauce might also add that extra needed flavor. This one is a keeper.

This was good although I would break the uncooked spaghetti into halves or thirds before cooking. It is of course not a low fat recipe and not one to eat often due to that, but lower fat versions are available. I would like to give them a try to compare.

Anniversary Chicken I

This was really yummy. I would never have thought to pair teriyaki sauce with ranch dressing, but it was very tasty. I used ranch I made at home. My husband and 21 yo son both loved it.

Chipotle Marinated Grilled Chicken

This recipe is delicious! We just finished eating it and really enjoyed it. It is spicy, so if you prefer milder fare better stay away. We used boneless chicken thighs, which cook well on the grill and are easier to eat than legs.
