Tuna Piccata Pasta Salad

Definitely a keeper! I use tri-color rotini for the pasta and reduce the oil a bit just to try to cut back on calories. I love it topped with some slivered almonds - yum!!

Chicken Marsala

This was a good and easy meal. I followed some recommendations of previous reviewers: doubled the fresh mushrooms and added them after letting the wine burn off for about 5 minutes; added cream of mushroom soup to make more sauce. I served it over angel hair pasta. Next time I will try adding something to make it a bit more flavorful...

Light, Crisp Waffles

I'm so glad to have found this recipe - it really does give you waffles that are light and fluffy on the inside, crispy on the outside, not heavy and chewy like every other recipe I've tried!

Salmon in the Dishwasher

It was an interesting concept and fun to try - unfortunately my dishwasher didn't provide the restaurant-quality cooking that nearly everyone else seemed to get! This was just OK - no better than salmon I've baked in the oven in terms of moistness. I didn't care for the mix of seasonings in the recipe. Maybe I'll try again someday with a different dishwasher and different seasonings!

Blueberry Waffles with Fast Blueberry Sauce

I just made this for Sunday brunch and it came out wonderfully! The batter recipe was very quick and simple and it cooked up really well in my Belgian waffle maker (I was pleasantly surprised, since the recipe that came with the waffle maker is complicated, takes over an hour to be ready and the resulting waffles were mediocre). The blueberry sauce was quite easy and quick to make as well. I served the waffles with whipped cream and powdered sugar. Great recipe!

Butterscotch Gingerbread Cookies

I wanted to make cookies for the holidays that combined the flavors of gingerbread and chocolate. I found this recipe and decided to try it, replacing the butterscotch morsels with semi-sweet chocolate ones (about 6 oz. -I'm glad I followed the recommendations of many reviewers to reduce the amount of chips - this recipe calls for way too many!). I liked the cookies, and got positive feedback from my fiance and his co-workers. In the end, they're nothing to write home about, but they make an interesting, unique chocolate chip cookie for holiday time!

Ham and Cheese Omelet Casserole

This was pretty easy and tasty! I scaled it to 2 servings, so I reduced the baking time to about 40 minutes, which worked out well. Based on previous reviews, I increased the amount of cheese (and I used sharp cheddar because I couldn't find shredded American at the supermarket!). I did find it a bit too salty, but that might have been because of the particular ham I used.

Maryland Crab Soup

Having never had "the real thing" before, I can't judge whether the flavor of the soup was authentic. It was a bit too spicy for my taste (that was my first time using "Old Bay"). It was quite easy to make (I didn't do the crab claws)and I like the fact that it included lots of veggies.
