Tuna Piccata Pasta Salad

Reviewed: Jul. 5, 2007
Definitely a keeper! I use tri-color rotini for the pasta and reduce the oil a bit just to try to cut back on calories. I love it topped with some slivered almonds - yum!!

Chicken Marsala

Reviewed: Nov. 26, 2006
This was a good and easy meal. I followed some recommendations of previous reviewers: doubled the fresh mushrooms and added them after letting the wine burn off for about 5 minutes; added cream of mushroom soup to make more sauce. I served it over angel hair pasta. Next time I will try adding something to make it a bit more flavorful...

Light, Crisp Waffles

Reviewed: Jan. 8, 2006
I'm so glad to have found this recipe - it really does give you waffles that are light and fluffy on the inside, crispy on the outside, not heavy and chewy like every other recipe I've tried!

Salmon in the Dishwasher

Reviewed: Aug. 15, 2005
It was an interesting concept and fun to try - unfortunately my dishwasher didn't provide the restaurant-quality cooking that nearly everyone else seemed to get! This was just OK - no better than salmon I've baked in the oven in terms of moistness. I didn't care for the mix of seasonings in the recipe. Maybe I'll try again someday with a different dishwasher and different seasonings!

Blueberry Waffles with Fast Blueberry Sauce

Reviewed: Jul. 31, 2005
I just made this for Sunday brunch and it came out wonderfully! The batter recipe was very quick and simple and it cooked up really well in my Belgian waffle maker (I was pleasantly surprised, since the recipe that came with the waffle maker is complicated, takes over an hour to be ready and the resulting waffles were mediocre). The blueberry sauce was quite easy and quick to make as well. I served the waffles with whipped cream and powdered sugar. Great recipe!

Butterscotch Gingerbread Cookies

Reviewed: Dec. 22, 2004
I wanted to make cookies for the holidays that combined the flavors of gingerbread and chocolate. I found this recipe and decided to try it, replacing the butterscotch morsels with semi-sweet chocolate ones (about 6 oz. -I'm glad I followed the recommendations of many reviewers to reduce the amount of chips - this recipe calls for way too many!). I liked the cookies, and got positive feedback from my fiance and his co-workers. In the end, they're nothing to write home about, but they make an interesting, unique chocolate chip cookie for holiday time!

Buffalo Chicken Strips II

Reviewed: Oct. 24, 2004
My fiance made this, using regular mayo and substituting chives for the green onions. We both think it's a keeper!

I think it's a bit heavy on the spices, but otherwise it's great!!!

Ham and Cheese Omelet Casserole

Reviewed: Sep. 18, 2004
This was pretty easy and tasty! I scaled it to 2 servings, so I reduced the baking time to about 40 minutes, which worked out well. Based on previous reviews, I increased the amount of cheese (and I used sharp cheddar because I couldn't find shredded American at the supermarket!). I did find it a bit too salty, but that might have been because of the particular ham I used.

Chris' Bay Area Burger

These were really easy to make and were an all-around hit at the mini BBQ I had yesterday! They have just enough seasoning to make them interesting; nothing overpowering.

Lobster and Chive Bisque

Reviewed: Sep. 4, 2004
This was pretty good - I scaled it to two servings and used more lobster. It was a bit too salty, so I will reduce or eliminate the salt next time.

Maryland Crab Soup

Reviewed: Aug. 27, 2004
Having never had "the real thing" before, I can't judge whether the flavor of the soup was authentic. It was a bit too spicy for my taste (that was my first time using "Old Bay"). It was quite easy to make (I didn't do the crab claws)and I like the fact that it included lots of veggies.

Turkey Burgers

Reviewed: Jul. 13, 2003
This was so simple and so delicious! I followed the advice of some other reviewers not to add any more salt (because packaged soup mixes tend to be very salty already). I will probably reduce the amount of water next time, though - the patties came out a bit too wet and didn't "travel" well (from plate to spatula to grill, or to freezer bag when I was trying to freeze the extras!). Thanks for the recipe, Krickett!

Salmon Loaf

Reviewed: Jun. 22, 2003
This is a simple and tasty recipe. The first time I made it, it came out WAY too salty (I suppose because the canned salmon already had lots of sodium), so the second time, I did not add any salt, and it was better. I also removed most of the larger bones from the salmon on my second attempt.

Rave Reviews Coconut Cake

Reviewed: May 27, 2003
Sorry to have to give this recipe its first bad review...there must be something REALLY wrong with one or more of the ingredient measurements or the amount of time to bake. Both the cake and the frosting were a disaster. I only deviated from the recipe in that I omitted the nuts. The cake was nowhere near fully baked after 35 minutes - I had to put it in again for about another 20 minutes at least...and then it was super crumbly. I think there was too much egg in the batter. The frosting was impossible to spread smoothly, which made the crumbly cake fall apart even more! In hindsight, this is not too surprising - there is not much of anything moist added to the cream cheese in order to give it a cake-frosting consistency. I am not a novice baker, so I probably should have followed my instincts a little more, but I guess I was fooled by all the glowing reviews this recipe recieved. No one said they changed anything. I have a hard time believing that following this recipe exactly could yield a good cake...anyway, there are a lot of other coconut cake recipes out there, so next time I'll try a different one!

Cream of Tomato Soup

Reviewed: Jan. 26, 2003
This was pretty easy and tasty! However, because of the 10 minutes of cooling time plus the addition of milk, the soup wasn't warm when served.
