About this Cook
I've been cooking since I was a little girl, thanks to my mom's wonderful guidance. I've just always been interested in food and experimenting with it. My true joy is cooking for others and also recreating recipes to make them healthier, but keeping the flavor. I cook because I'm single and picky and would rather know everything that goes into my meal than have to guess what someone else has done to it! It's also therapeutic for me.
My favorite things to cook
I love baking: cookies, cakes, pies, etc. I love trying a new dessert on my family friends and watcing them enjoy it. I started making Pumpkin Chocolate Cheesecake bars for the holidays and they won rave reviews (still waiting for allrecipes to post it, though!). I also just love making dinner, homemade and fresh everything. Yummy salads for lunch, too. No real favorites...if it's healthy and I can freeze leftovers, I've probably tried it or tried to re-make it!
My favorite family cooking traditions
Every holiday, my sisters, mom and I divide up the cooking. I usually handle dessert just because they all trust me with it! I do try to be a showstopper with my many creations every holiday!
My cooking triumphs
I don't know if I've achieved a real triumph yet, but I remember the days when flipping pancakes and eggs were challenging. Thankfully, I think I've improved that skill of mine!
My cooking tragedies
I have many goofs, but that's the fun of it all. I get upset when I don't make something delicious, but I try to go back and figure out what went wrong. My first "goof" memory was when I was 11. I made my dad beef stew with dumplings and put too much of one of those gravy thickeners in the stew it turned out like paste! I was so sad, but have never made that mistake again!

Bacon Roll Ups II
Love the simplicity of this app! I use pineapple cream cheese (or I mix a can of pineapple w/plain cream cheese). I roll out the bread with a rolling pin, spread the cream cheese, roll & then wrap with bacon. I make these ahead of time, wrap in plastic wrap and freeze them. I defrost these before baking and slice while still partially frozen - it is much easier & cleaner to cut these while firm than once cooked or right after you roll them. These are great to have on hand and each time I have made this app, they are gone within minutes & people always ask what they are and how to make them!

Chicken Pizzaiola
Pizzaiola in southern Italy refers to a dish, almost always beef, cooked with pizza flavorings, meaning canned plum tomatoes and dried oregano. This recipe is a healthy take on that idea. The chicken turns out so tender and flavorful - great if you are looking for something different to do with chicken. Very versatile (think of all the veggies you can sub in & out) & healthful, too. One of my favorite recipes in the winter!

Old Fashioned Apple Dumplings
Well, these were loved by everyone at Thanksgiving & have replaced apple pie on our table forever! They are time consuming to prepare, but I did mine the day before and baked 15 - 20 minutes longer while we sat down to dinner & they came out perfectly. I used small(ish) Granny Smiths and because my butter was so small, I just added the spices to the softened butter and stuffed the hollowed cores with the softened spiced butter. Again, a really delicious recipe that was made ahead and loved by everyone in the family.
