Chicken and Dumplings IV

Reviewed: Feb. 22, 2003
Wonderful comfort food. My only complaint would be that it was a little on the bland side. I added some thyme and sage to the broth, and it turned out just fantastic. Thanks for the recipe!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Feb. 22, 2003
The taste was great, but they spread so much! Normally, I like a more dense cookie, but we improvised and used these to make the most amazing ice cream cookie sandwiches ever - YUM!!

Fruity Tuna Salad

Reviewed: Feb. 22, 2003
I improvised a bit and threw in some dried cranberries and used just plain lowfat yogurt. The taste was fantastic - great alternative to regular tuna salad - thanks!

Rice with Black Beans

This was almost too easy to taste so good - amazing with cornbread fresh out of the oven. Great recipe - thanks!

Apricot/Cranberry Chutney

Reviewed: Feb. 22, 2003
WOW!! My husband, who hates cranberry sauce, found a million ways to use this after our Thanksgiving dinner. We've had it on top of baked chicken, in wraps with turkey, chopped apples and lettuce, on roast beef sandwiches, and in various other dishes. Fantastic recipe!

Applesauce Bread I

Reviewed: Mar. 1, 2003
This was very good, but I made a few alterations. Like some others, I took the oil down to 1/4c (only made one loaf), and increased the applesauce by a tablespoon or two (used my homemade chunky applesauce instead of the kind from a jar). Instead of raisins and walnuts, I added dried cranberries and pecans. Wonderful taste and texture - thanks for the recipe!

Chicken Curry I

Reviewed: Mar. 2, 2003
Being a huge fan of curry, and after the amazing smells wafting from the simmering sauce, I'd expected an incredibly flavorful dish, but I'm sorry to say that my husband and I were disappointed - the taste was a bit bland. Perhaps I'll add more curry next time, maybe some coconut milk as well.

Sarah's Applesauce

Reviewed: Mar. 3, 2003
Goodbye Motts! Wow, thank you so much for this recipe. I will never again buy applesauce in the jar. Not only is this far more flavorful, it's incredibly economical, too. I made one batch last weekend - half was eaten, and the other half was used to make Applesauce Bread (also found on this website), and am already about to make my second!

Chewy Crispy Coconut Cookies

Reviewed: Mar. 6, 2003
I am a huge coconut fan, but my hubby loves chocolate. So I added 2/3c chocolate chips - they were a huge hit! I did, however, have to add 2T of water to moisten the batter a bit, though... probably because I live in a very dry climate. Thanks for the recipe - this one's a keeper!

Garlic Chicken

Reviewed: Mar. 10, 2003
Wonderful flavor and very tender! I added some fresh chopped parsley to the breadcrumb/parmesan mixture to give it some color. I made this a few weeks ago, and tonight my husband asked for it by name! This will definitely be a dinner staple in our household - thanks!

Kitchen Sink Cookies

Reviewed: Apr. 18, 2003
These cookies were sinfully delicious! The only change I made was adding about 1/4c water to the batter b/c it was just way too dry (we live in a very dry climate, so I'm not surprised). I made these cookies as a welcome gift for my new neighbor and her two boys - I'm sure they'll love them!

California Cole Slaw

Reviewed: May 24, 2003
Like another person suggested, I just used a bag of prepared cole slaw - this took the prep time down to less than five minutes, and it was delicious! Thanks so much for a very easy and tasty recipe - I'll make this one again and again.

Cherry Chicken Lettuce Wraps

Reviewed: Jun. 26, 2003
Just an FYI... if you're pitting the cherries yourself, give this recipe way more than 15 minutes to prepare. I actually halved the cherries, and it still seemed like too much. Also cut the oil in half and added soy sauce and garlic powder, like others suggested. I thought the recipe was okay, but my husband and in-laws loved it, so I've rated it four stars. Thanks!

Corn and Black Bean Salad

So simple yet so good! Didn't have any fresh cilantro handy, so just used a tablespoon or so of dried. I'll definitely be making this recipe again!

Penne with Pink Vodka Sauce

Reviewed: Aug. 30, 2003
The sauce was wonderful... reminds me of the Penne Vodka I used to order at my favorite authentic Italian restaurant. The only tweaking we did was using Absolut Citron - it was the only vodka we had in the house! We were pleasantly surprised - it gave the sauce a really fresh taste. We also added chicken to round out the meal. My only complaint would be that this recipe makes literally twice the sauce you need for the pasta. Either double the pasta or halve the sauce.

Vegan Black Bean Soup

Reviewed: Sep. 4, 2003
Fantastic recipe - so easy, healthy and incredibly flavorful. The only thing I changed was the broth - we didn't have any veggie broth on hand, so I used beef broth instead. I also cut back from what the recipe calls for to keep it thick and hearty. My husband really liked it, but said it tasted more like chili than black bean soup - may pump up the cumin and halve the chili powder next time around. Would be fantastic with corn bread. This will be a household staple - thanks!

Acorn Squash

Reviewed: Sep. 14, 2003
So yummy. I decided to make this more of a meal, so I did the following: sauteed 1/4c pecans, 1/4c chopped peeled apple, and 1/8c diced celery in a teaspoon of butter (I use Becel - heart-healthy alternative) for three or four minutes on medium-high heat, then added about 1/2c cooked couscous. Stirred it all together, scooped it into the squash (after baking for 60 minutes total), then put it back it for another five minutes. Just before serving, I drizzled a bit of (real) maple syrup over the top. Even my husband who doesn't really like squash said it was really good. Pair with a small salad for a healthy meal.

Julia's Best Ever Chocolate Chip Cookies In A Jar

Reviewed: Nov. 21, 2004
I made a dozen of these to give away as party favors for my son's first birthday party. Turned out great, but so much chocolate I decided to call them "Mostly Chocolate Chip Cookies!" I also left the chocolate chips out of the flour mixture so I could create a more layered look in the jar: 1/2 flour mixture, 1c chocolate chips, brown sugar, 1/2 flour mixture, 1c chocolate chips. Can't wait to give them out!

American Frittata

Reviewed: May 10, 2005
Very satisfying, but I agree with other reviewers who said it might need a little something more. I think I'll change the cheese to swiss instead of cheddar next time, maybe add some red bell pepper, and use a semi-spicy sausage instead of the ham. I also only used two potatoes and it was plenty.
