Banana Banana Bread

This was just great! I didn't change a thing, except extend the baking time 5-10 minutes because it was still raw in the middle. I have two sick toddlers right now with zero appetite, but they ate this. Thanks much!

Caramel Apples

So easy and yummy. My son had so much fun putting his own touch on them, complete with chocolate chips and sprinkles. And for the user who thought many had ruined their apples using hard candies, I'm thinking not... I'd never even think to use the hard variety. Great recipe, thank you!

Mexican Shepherd's Pie

So incredibly easy, great comfort food. Greatest part was finding out that it only took 40 minutes total to prepare, not one hour as stated in the recipe, even though I cooked and stripped fresh corn on the cob in place of canned. This will definitely be in my recipe file - thanks!

Pineapple Mango Salsa over Grilled Halibut

Would have rated this one five stars, but the onion and cilantro in the salsa were a little overpowering... gave more spice than flavor, we thought. I'll make it again but will probably decrease the onion and cilantro and increase the mango and pineapple, maybe add in a little cucumber as well. It did, however, turn my seafood-phobic husband on to fish, so that alone deserves four stars!

Three Animal Italian Meatballs

SO GOOD! I had yet to find a meatball recipe that my husband liked, but he absolutely loved these. I used spicy Italian sausage and added garlic powder, oregano, basil, rosemary and black pepper for extra flavor... simply delish.

Delicious Black Bean Burritos

Great base recipe. I added cumin and diced tomatoes, as others suggested, but will try adding a little hot sauce next time - it was a little bland for our taste. We also added chicken as my husband isn't big on veggie-only meals - with this addition, we easily had three to four servings. With the modifications, this one's definitely a keeper - even my toddler gobbled it up!

Crushed Pineapple Sour Cream Pie

So incredibly easy! This literally took minutes to make. I followed your advice and just mixed everything by hand - I actually thought mine looked a little thick, but it turned out just fine. One thing I might tweak next time is taking the sugar down a bit, maybe a 1 or 1 1/2 tablespoons... it was a little on the sweet side. Still, my husband and I went back for seconds, so I'll definitely make it again. Thanks!

Shepherd's Pie VI

Great recipe! I made a few alterations as per previous reviewers, i.e., adding a garlic clove to the beef and onions and bumping the ketchup up to 1/4c. I also used two cans of diced peas and carrots in place of the boiled and mashed carrots - saved a ton of time and effort and was more visually appealing to my 21-month old. I also omitted the onions in the potatoes but added a little drizzled butter over the top to add a bit more flavor. To my great delight, my very picky 21-month old ate almost all of it! This will definitely be a staple in my house - thanks much!

Hummus III

Fantastic recipe! So easy to make - I'll never buy store-bought hummus again. Served it up with the Tabbouleh III recipe found on this site, plus feta chunks, olives and the Naan bread, and made for an excellent Mediterranean feast. Thanks!

Excellent recipe! I also cut back a bit on the oil to keep it healthier, but not too much. We loved the extra moisture that was there... perfect for dipping with some Naan bread! Served it up the Hummus III recipe found on this site, plus feta chunks, olives and the Naan bread, and made for a fantastic Mediterranean feast. Thanks!

Chrissy's Sweet 'n' Sour Tomato Salad

Following suggestions from the others, I used olive oil and added thinly sliced cucumbers. I also halved the onion to cut down on the onion-breath! I agree with those who said it made too much dressing - I'll definitely cut that at least in half next time. Tasty and simple and uses ingredients I almost always have on hand - thanks!

Chicken Enchiladas I

Very good, but a little too spicy for DH and me. After seeing the reviews saying there wasn't enough flavor, I used half tomato sauce and half medium picante sauce (and no water), plus shredded Mexican cheese instead of cheddar... think this combo added a bit too much kick. Would have loved to use the Red Enchilada Sauce, but didn't have enough time... will definitely try next time I make it.

Greek Style Potatoes

Very tasty... so much so that my 17 month old who hates potatoes loved them! I do agree with another reviewer, however, that it could have used a little more lemon, and did benefit from a little oregano (I used one teaspoon).

American Frittata

Very satisfying, but I agree with other reviewers who said it might need a little something more. I think I'll change the cheese to swiss instead of cheddar next time, maybe add some red bell pepper, and use a semi-spicy sausage instead of the ham. I also only used two potatoes and it was plenty.

Julia's Best Ever Chocolate Chip Cookies In A Jar

I made a dozen of these to give away as party favors for my son's first birthday party. Turned out great, but so much chocolate I decided to call them "Mostly Chocolate Chip Cookies!" I also left the chocolate chips out of the flour mixture so I could create a more layered look in the jar: 1/2 flour mixture, 1c chocolate chips, brown sugar, 1/2 flour mixture, 1c chocolate chips. Can't wait to give them out!

Acorn Squash

So yummy. I decided to make this more of a meal, so I did the following: sauteed 1/4c pecans, 1/4c chopped peeled apple, and 1/8c diced celery in a teaspoon of butter (I use Becel - heart-healthy alternative) for three or four minutes on medium-high heat, then added about 1/2c cooked couscous. Stirred it all together, scooped it into the squash (after baking for 60 minutes total), then put it back it for another five minutes. Just before serving, I drizzled a bit of (real) maple syrup over the top. Even my husband who doesn't really like squash said it was really good. Pair with a small salad for a healthy meal.

Vegan Black Bean Soup

Fantastic recipe - so easy, healthy and incredibly flavorful. The only thing I changed was the broth - we didn't have any veggie broth on hand, so I used beef broth instead. I also cut back from what the recipe calls for to keep it thick and hearty. My husband really liked it, but said it tasted more like chili than black bean soup - may pump up the cumin and halve the chili powder next time around. Would be fantastic with corn bread. This will be a household staple - thanks!
