Easy Egg Drop Soup

I'm giving it five stars not just because it tasted wonderful, but because it was so easy AND my very picky 5 year old loved it! I followed the advice of a few previous reviewers and made the following tweaks: added 1/8t ground ginger, 1/4t garlic powder and 1t dried onion flakes (because I didn't have any green onions on hand), and only added a scant tablespoon of water instead of two to the egg, then swirled it gently once I added it to the broth. It smelled heavenly, looked like something I'd picked up from our favorite Chinese restaurant, and could not have taken more than 10 minutes to make.

Banana Bread I

JUST what I was looking for! Super simple, all ingredients on hand, and with the moist and dense texture I was looking for. I made a few changes - added 1/2t baking soda, 1t vanilla, and an extra banana (since mine were on the small side). Since I didn't have small loaf pans, I made mine into muffins instead (yield 16 large muffins), and sprinkled cinnamon sugar on top of each before putting them into the oven. Baked at 350 degrees for 18 minutes, and they came out perfectly! Definitely a keeper... my house smells heavenly. ;)

Raspberry Truffles

So incredibly easy. I followed the recipe exactly, but did use a higher-end raspberry spread and Ghiradelli chocolate. Mine ended up chilling for two hours, and it was actually quite stiff to begin with, but worked pretty easily into the shapes I wanted. Ran out of almonds, so rolled them in one of three coatings: chopped pecans, coconut or cocoa. Super yum - thanks for making this part of my hubby's Valentine's Day gift so easy!

Greek Tomato Salad

Dressing was fabulous! I subbed cukes for the peppers, and left out the onions to make it more kid-friendly. I make Greek salad a lot, but this version is a new fave. My kids used extra dressing for their chicken and rice, and couldn't get enough.

Easy Sugar Cookies

This dough was so incredibly easy to work with. I did refrigerate it, but only for about 45 minutes, and only out of necessity since I squeezed the dough-making in after dinner, threw it in the fridge, put the kiddos to bed, then back downstairs to do the baking! Only tweak I made was using an extra 1/2 teaspoon of vanilla. Made two dozen sugar cookies, flattening with a sugar-coated drinking glass, then made one dozen as Snickerdoodles (rolled the balls in cinnamon sugar), and the last dozen as Christmas thumbprints (rolled in green or red sugar, and will add frosting or icing later). Three kinds of cookies from one batch, all wonderfully textured and sweet - this one's definitely a keeper!

Best Big, Fat, Chewy Chocolate Chip Cookie

Wow - so yummy! I did nothing to alter the recipe, and it was just perfect. We just got back from Disney, and these honestly look and taste so much like the big cookies they sell in the resort bakeries, but even better because they're not quite as heavy. Kids love them, hubby loves them - thanks for a great addition to my recipe box!

Colorful Vegetable Fajitas

Made exactly as written, with the exception of adding slices of avocado (on another reviewer's recommendation), and using whole wheat tortillas. So incredibly easy, tasty and filling - definitely a staple for us.

Soft & Fruity Oatmeal Cookies

Wow - this is our new favorite cookie recipe! Usually my kids go for chocolate chip, but we didn't have any in the house, so I went hunting for a new recipe. To this, I added chopped dates, chopped apricots and coconut. I flattened them just slightly, with no sugar added, and they turned out perfectly! I'm known for my cookie-baking acumen, and these are absolutely the best I've ever made. Thanks!!

Excellent! So easy... followed the recipe exactly, with the exception of cooking just 15 minutes at the end instead of 30. Fabulous with rice and plantains... definitely a keeper!

Cuban Beef Stew

Very easy and satisfying. Unfortunately, I didn't have any sherry, so I substituted beef broth. The flavor was nice, but I'm sure it would have been better with the wine... will have to make it again sometime as written. Good recipe, though - thanks!

Rich and Simple French Onion Soup

Very simple and delicious. I added about 1T of Worcestershire sauce, as previously recommended, but would probably cut the butter in half next time just to make it a little healthier. Otherwise, really good... thanks!

Peppermint Snowballs

So yummy and easy. I was looking for a quick and fun recipe to make with my 3 and 5 year olds. Sugar cookies sounded fun, but didn't want to wait for the dough to chill. I rolled the balls to get the right size, let them roll them in sugar, and then let them decorate in either crushed candy canes or colored sprinkles. They had a blast and the cookies turned out great. Thanks for a new holiday tradition!

Quick and Easy Vegetable Curry

This was such a great base recipe. I made a few alterations - used 1 1/2 c chicken broth (what I had on hand), 1 can coconut milk. Instead of the frozen veggies, I used the onion and garlic but then added 1/2c chopped red pepper and about 3/4c whole grape tomatoes. I then added 1 can chickpeas plus about 3/4c peas. I added a wee bit of sugar to mellow the spice a little - might cut the curry to 2T next time so my little ones can try, but still delicious. Served with basmati rice and homemade naan - to die for. Thank you!!

Curried Coconut Chicken

This was very good - could be a little more flavorful, so I'll add a bit more curry next time. I did cut back on the sugar, just to 2T instead of 3T - I like a sweeter curry, so this was perfect. It was a little soupy, but I noticed what was left in the pan had thickened upon standing. We had it with naan tonight - will have leftovers with jasmine rice or over potatoes. Yummy.

Banana Banana Bread

This was just great! I didn't change a thing, except extend the baking time 5-10 minutes because it was still raw in the middle. I have two sick toddlers right now with zero appetite, but they ate this. Thanks much!

Caramel Apples

So easy and yummy. My son had so much fun putting his own touch on them, complete with chocolate chips and sprinkles. And for the user who thought many had ruined their apples using hard candies, I'm thinking not... I'd never even think to use the hard variety. Great recipe, thank you!

Mexican Shepherd's Pie

So incredibly easy, great comfort food. Greatest part was finding out that it only took 40 minutes total to prepare, not one hour as stated in the recipe, even though I cooked and stripped fresh corn on the cob in place of canned. This will definitely be in my recipe file - thanks!

Pineapple Mango Salsa over Grilled Halibut

Would have rated this one five stars, but the onion and cilantro in the salsa were a little overpowering... gave more spice than flavor, we thought. I'll make it again but will probably decrease the onion and cilantro and increase the mango and pineapple, maybe add in a little cucumber as well. It did, however, turn my seafood-phobic husband on to fish, so that alone deserves four stars!

Chicken Enchiladas II

Very good, didn't change a thing. We're usually not that crazy about cream soup based recipes as they can often be fairly bland, but this was actually quite flavorful.
