Michelle's Coconut Chicken Curry

Reviewed: Mar. 13, 2015
Great and super easy recipe! Followed the advice of some of the reviews, and added carrots, cubed potatoes, and peppers (towards the end so they wouldn't get overcooked). Also increased the curry to 4 tablespoons and added 2T brown sugar. Will definitely make again!

Teriyaki Marinade and Sauce

Reviewed: Dec. 27, 2013
Exactly what I was looking for! I'd run out of teriyaki sauce and needed something quick for the pork stir fry I was throwing together. Sautéed chopped carrots, red peppers and celery (about 2c total) in 1T coconut oil. Added about 12oz slicked leftover pork tenderloin to the skillet, added this teriyaki sauce and covered over medium heat until warmed through. Served over brown rice. The whole family loved it!

Mom's Italian Beef Barley Soup

Reviewed: Dec. 21, 2013
Very filling and tasty, and the whole family loved it! I did add carrots, celery and a garlic clove at the beginning, plus increased the water to 7 cups with one extra bouillon cube. Perfect dinner on a rainy day, served up with warm crusty bread right out of the oven. :)

Taco Seasoning I

Reviewed: Dec. 27, 2012
So quick and easy, and much better than store-bought. The only change I made was adding 1 teaspoon of cornstarch - thickened up quite nicely. I use it with a 1/2 pound of lean turkey and 1c of kidney beans for a healthier version of taco night!

Quinoa and Black Beans

Made exactly as written, and SO good! Hubby squeezed some fresh lime juice on his serving, and made it even better. Definitely a keeper!

Lemonade

Reviewed: Jul. 22, 2012
Super easy and a huge hit for the kids' lemonade stand - we went through four batches! I bumped the sugar up to 2/3 cup because I knew most of the neighborhood kids would want a sweeter lemonade, but will try going with just a half cup next time to up the tart factor.

Easy Egg Drop Soup

Reviewed: Nov. 9, 2011
I'm giving it five stars not just because it tasted wonderful, but because it was so easy AND my very picky 5 year old loved it! I followed the advice of a few previous reviewers and made the following tweaks: added 1/8t ground ginger, 1/4t garlic powder and 1t dried onion flakes (because I didn't have any green onions on hand), and only added a scant tablespoon of water instead of two to the egg, then swirled it gently once I added it to the broth. It smelled heavenly, looked like something I'd picked up from our favorite Chinese restaurant, and could not have taken more than 10 minutes to make.

Banana Bread

Reviewed: Oct. 28, 2011
JUST what I was looking for! Super simple, all ingredients on hand, and with the moist and dense texture I was looking for. I made a few changes - added 1/2t baking soda, 1t vanilla, and an extra banana (since mine were on the small side). Since I didn't have small loaf pans, I made mine into muffins instead (yield 16 large muffins), and sprinkled cinnamon sugar on top of each before putting them into the oven. Baked at 350 degrees for 18 minutes, and they came out perfectly! Definitely a keeper... my house smells heavenly. ;)

Raspberry Truffles

Reviewed: Feb. 13, 2011
So incredibly easy. I followed the recipe exactly, but did use a higher-end raspberry spread and Ghiradelli chocolate. Mine ended up chilling for two hours, and it was actually quite stiff to begin with, but worked pretty easily into the shapes I wanted. Ran out of almonds, so rolled them in one of three coatings: chopped pecans, coconut or cocoa. Super yum - thanks for making this part of my hubby's Valentine's Day gift so easy!

Greek Tomato Salad

Reviewed: Feb. 12, 2011
Dressing was fabulous! I subbed cukes for the peppers, and left out the onions to make it more kid-friendly. I make Greek salad a lot, but this version is a new fave. My kids used extra dressing for their chicken and rice, and couldn't get enough.

Easy Sugar Cookies

Reviewed: Dec. 13, 2010
This dough was so incredibly easy to work with. I did refrigerate it, but only for about 45 minutes, and only out of necessity since I squeezed the dough-making in after dinner, threw it in the fridge, put the kiddos to bed, then back downstairs to do the baking! Only tweak I made was using an extra 1/2 teaspoon of vanilla. Made two dozen sugar cookies, flattening with a sugar-coated drinking glass, then made one dozen as Snickerdoodles (rolled the balls in cinnamon sugar), and the last dozen as Christmas thumbprints (rolled in green or red sugar, and will add frosting or icing later). Three kinds of cookies from one batch, all wonderfully textured and sweet - this one's definitely a keeper!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Dec. 12, 2010
Wow - so yummy! I did nothing to alter the recipe, and it was just perfect. We just got back from Disney, and these honestly look and taste so much like the big cookies they sell in the resort bakeries, but even better because they're not quite as heavy. Kids love them, hubby loves them - thanks for a great addition to my recipe box!

Colorful Vegetable Fajitas

Made exactly as written, with the exception of adding slices of avocado (on another reviewer's recommendation), and using whole wheat tortillas. So incredibly easy, tasty and filling - definitely a staple for us.

Soft & Fruity Oatmeal Cookies

Reviewed: Oct. 2, 2010
Wow - this is our new favorite cookie recipe! Usually my kids go for chocolate chip, but we didn't have any in the house, so I went hunting for a new recipe. To this, I added chopped dates, chopped apricots and coconut. I flattened them just slightly, with no sugar added, and they turned out perfectly! I'm known for my cookie-baking acumen, and these are absolutely the best I've ever made. Thanks!!

Excellent! So easy... followed the recipe exactly, with the exception of cooking just 15 minutes at the end instead of 30. Fabulous with rice and plantains... definitely a keeper!

Cuban Beef Stew

Reviewed: Mar. 8, 2009
Very easy and satisfying. Unfortunately, I didn't have any sherry, so I substituted beef broth. The flavor was nice, but I'm sure it would have been better with the wine... will have to make it again sometime as written. Good recipe, though - thanks!
