Waffles I
This recipe is my kids' favorite. I, too, removed on whole egg and added a few egg whites. I make these on school days, so I want the kid to have a little more protein to help keep them full until lunchtime. I add bittersweet chips for one kid and vanilla chips for another. The waffles are light, fluffy, and crispy on the outside. I don't make the mix ahead of time, but I do prepare all of the dry ingredients the night before. I just add the wet ingredients in the morning, which makes things just a little faster and easier on hectic school mornings.

Cindy's Awesome Clam Chowder
I used the vegetable dried soup mix because that is all my local grocer had, and it still came out pretty good. The taste was great, but there was a lot of 'clutter' with all he dried veggies. I added some onion with the potatoes and sauteed for 10 minutes in the bacon grease to make up for not using leek soup. I didn't add any salt and served with some sourdough bread. The recipe made enough soup for two lunches for a family of four. I was really happy with it.

Mama's Hearty Minestrone
Excellent recipe. The soup was thick enough to be considered a stew. I replaced the pasta with kidney beans to add fiber and protein without the pasta carbs. I also used whole stewed tomatoes and ran them through the vitamix to make them a tad smoother. I'm the only one who likes chunky tomato texture. I used organic, grass-fed beef, and it was still an awesome deal to feed four people. We had some left over for lunch the next day. It was really, really great. I plan on using the base as a stew for whatever I've got in the fridge. It would be great as a chicken vegetable or vegetarian stew. I really love that it's so easy to make.
