Sausage Pasta

I made this recipe several times and it seemed to lack something. (NOTE: my grocery store did not have Italian sausage so I used the smoked sausage loops from Hillshire Farm, sliced and halved.) It was good but did not sparkle. After some experimenting, I found that adding several TBSP of Cajun seasoning, a sprinkle of garlic and onion powders, and adding salad shrimp at the end of the cooking time really gave this dish a boost. I usually make extra, so I increase the sausage to 2 lbs and increase the other ingredients accordingly. I also use whole grain pasta (angel hair or spaghetti style) and the dish is amazingly flavorful.....I get tons of compliments on it. And since it's so easy to make, it lends itself to many occasions!

Balsamic Cream Sauce

I was looking for a basic cream sauce recipe to use up some heavy cream I had in the fridge. I wasn't interested in any that I saw until this one; I had all the ingredients and it looked very simple to do. I served it over whole grain penne, and my hubby loved it over the spiced pork loin I served this evening. It made a very simple meal seem very elegant. The balsamic vinegar gives this a wonderful flavor! I give this an enthusiastic thumbs-up!

Oyster Stew

I am personally not a fan of shellfish, and I have never eaten oyster stew. My husband loves it, though. During this recent cold snap, my hubby remarked that it was a shame I didn't like oysters because he would surely enjoy a bowl of oyster stew right about then. So I did an online search of oyster stew recipes and settled on yours because it seemed relatively easy to make, and the vast majority of the reviews were favorable. I followed the recipe as best I could: I used finely chopped red onion with garlic powder sprinkled over it in place of the shallots, and canned oysters. Even so, once I was finished and had my hubby"taste test" it to fine-tune the seasoning, he was blown away. And after 2 bowls of the stew, he told me that it was the best oyster stew he'd ever had! I tried it and I'm still not a fan, but I will not mind making this for him at all.....THANK YOU!
