Chicken Tikka Masala

Reviewed: Apr. 22, 2010
I can't believe how good this dish came out. It is beautiful and tastes as good as it looks! I subsituted lamb for chicken and served it with homemade garlic naan. Amazing! Firstly, the salt amounts are definitely off. I just added salt to taste. I also doubled (or more) the amounts of spices called for, used garam masala instead of the cinnamon, and used high quality fresh ginger. I recommend trying to find a spanish (hot) paprika if you can - it adds even more kick and the color is a deep red. I also used some tomato paste in addition to the sauce. And if you have indian markets nearby, try using traditional ghee in place of the butter! mmmmm!

Black Magic Cake

Reviewed: Apr. 22, 2010
Wowie!!! This was the first homemade cake I have attempted - and it came out sOooOOOO good. Super moist and chocolatey delicious. I have made it since several times at the request of my boyfriend - it is such an easy, almost foolproof cake. Just make sure you have fresh baking soda & if you can find it use valhrona dark powdered chocolate

Simply Traditional Lasagna

Reviewed: Apr. 22, 2010
This is a fabulous, easy lasagna. Tastes very traditional and comforting, not overly cheesy and fluffy. MmmMMMm my favorite recipe I've found so far. I used ground turkey usually.

Hamburger Mac Skillet

Reviewed: Apr. 27, 2010
I added a lot of seasoning - namely cumin & a packet of taco seasoning to the beef. Also I added cubed velveeta cheese at the end to make it a "taco mac"

Chicken Cordon Bleu II

Reviewed: May 29, 2011
This came out delicious. I pounded the chicken out quite a bit, and sprinkled some chopped basil on top of the ham & cheese. As well as a sprinkling of salt and pepper. In the flour mixture I added 2 teaspoons of garlic powder. At the very end I also added julienned basil. my boyfriend loved it, I'll make it again.

Easy Chocolate Creme Brulee

Reviewed: May 29, 2011
I couldn't give this recipe a better review for the same reasons of the person before me. I made revisions as I went along, however, and it came out amazing. First thing, I cut the recipe back to 4 servings, which resulted in 5 4oz servings. I used a pint of heavy whipping cream, mixed in the vanilla extract and added some fresh grated nutmeg. I warmed the cream until scalding and removed it from the heat, and carefully whipped in an 11 oz bag of 60% cacao Ghirardelli chocolate chips. In another bowl I mixed 4 egg yolks with 1/3 cup powdered sugar and then mixed that into the chocolate cream. Then into the ramekins, which I did stand in a bain-marie. (Which for me was a casserole dish with some water, with the ramekins sitting about 1/2 submerged) it is easy and cooks the creme brulee's to perfection. 30 minutes later at 350, they were perfect. I love breaking through the hardened sugar with my spoon. delish with these modifications!
