Angela's Awesome Enchiladas

My family loves these enchiladas! Super easy to make, and you really can't go wrong...even if you don't have all the ingredients they will still turn out great. I've made them with no sour cream (not as good, but what do you do) and also without the green onions and lime. I prefer to only use half the taco seasoning otherwise it seems kind of strong, and also instead of 1 c. water, I use the water from the chicken that I boiled. I will make this again and again.

Best Chocolate Chip Cookies

Ok, so this might not be fair because the first time I made these cookies I used other's suggestions without first trying the original. I did the 1 1/2 c. brown sugar and 1/2 white sugar, I prefer the way I usually make them with 1 c. brown, 3/4 c. white. I also used the suggestion of cream of tarter...didnt notice much difference. Next time I'll try the original recipe. All in all, you really cant go wrong with chocolate chip cookies...they'll still get eaten.

Slow Cooker Texas Pulled Pork

Very good pulled pork. My problem was the sauce was too runny I couldn't really taste the flavor of the sauce and the flavor didn't stick to the meat. My solution..after the pork was removed and shreded, I dissolved 2 TBSP corn startch in 1 TBSP apple cider vinegar and added it to the sauce. It thickened right up so the flavor (which was amazing once thickened)actually stuck to the meat. It was the first time my husband asked for seconds when I made pulled pork.

Vanilla Wafer Cookies

I love these cookies! I have made them a few times: 1st time, just like the recipe states but had to add more flour becuase the dough was still sticky then I rolled the dough into grape sized balls and baked 14 min. They turned out great. Next I tried another reviewers advice and added another 1 tbsp of vanilla, but because of the added moisture I had to add a lot more flour to get it doughy enough to roll into balls and because of this they actually turned out very bland and not good at all. Finally I made again just as the recipe states only this time added just a bit more flour, the dough was still sticky but i just dropped the dough into small mounds and baked...I actually liked this way best. Because I didn't roll the dough it cooked flatter and was a little more crispy like it should be. Now I will always just do it exactly as the recipe states.

Jamie's Cranberry Spinach Salad

Made for thanksgiving and was great. I took other's advice and cut back to 1/4 c. sugar. I used white vinegar and cider vinegar with the oil but only used about half of the dressing on the salad, cuz it didn't seem to need any more than that. I will be making again, Thanks for the recipe

Roasted Sweet Potatoes & Onions

Excellent. Made for Thanksgiving because I wanted a healthier option to the marshmellowy sweet potatoes. I was short on time since the turkey tied up the oven & I didn't want it sitting out for an hour while I waited for the potatoes, so I tried a couple of short cuts. I peeled and cut the potatoes, coated with oil, seasoned with salt/pepper and Italian seasoning, then covered in seran wrap and microwaved about 10 minutes til they were getting soft. While I did this, I sauteed the onions. Once I took the potatoes out of the microwave, I added the onions and put uncovered in the oven for about 20-25 minutes and they were great. (I left out the amaretto cuz I couldn't find any at the store).

Super Easy Doughnuts

I made this recipe twice. First time, to the letter, turned out great, but thought it could use a little more flavor. Second time I used 1 tsp vanilla instead of 1/2, and added 2 TBSP of vanilla instant pudding mix to the flour mixture. It added just enough of the flavor I was looking for. Dont diminsh the vinegar, it needs it for the rising power and will not affect the taste if that's what you're worried about. I found that all the listed amount of ingredients made for a very good consistancy of dough. It was just barely sticky, but by the time you add the flour for rolling it is fine. You don't want to overwork the dough with too much flour or it will become tough. try to handle as little as possible. I used a mason jar lid for the cut out and the top of of two liter bottle for the center cut. Perfect!!

Refried Beans Without the Refry

I had to try this recipe after reading all the rave reviews. These are the best refried beans ever, and the easiest to make. I've made them with canned diced jalapeno and fresh and didn't notice any difference, added some cooked bacon with grease once, but didn't think about it until near the end of cooking time and it didn't add much flavor. I'll try again but add at the beginning.
