Absolutely flawless and too delicious for such a easy recipe. At first I found it to be too sour and sweet when eaten by itself, then I added a bit whip cream and voila, the perfect mix of creaminess, texture, tanginess and sweetness. I am making another one to take to girlfriend's house. I did substitute 1/4 cup of Persian lime juice for the key lime juice because quite frankly one bag of key limes from Publix barely yielded me 1/2 cup of key lime juice. Supposedly if one mixes half lemon juice and half lime juice, the flavor profile can be very close to one made with real key lime juice, will try that when I have a chance. Key lime is way too expensive where I am from (like $3 for one-lb bag).
