Dijon Grilled Pork Chops

Reviewed: Mar. 6, 2012
Great marinade, even for 30 minutes it added good flavor! I boiled the marinade after and dipped the chops in it, it wasn't necessary because our thick chops were juicy but the sauce was very good! Oh and I didnt have apple juice so I used OJ, yummy! :)

Double Chocolate Mocha Trifle

Reviewed: Jan. 23, 2012
This is sooo wonderful! Make sure you make pudding with directions on box (using slightly less milk than called for because of added the coffee). I had one bag (8oz) of Heath bits and it got a little lost so dont be afraid to add more, or maybe just bigger chunks wouldnt have gotten so lost in all that pudding. I had some caramel topping in the fridge so I added a couple squeezes of that! We ate it after only being in the fridge for three hours, it was great, but even better the next day! The brownies got chewier! Yum yum!

American Shepherd's Pie

Reviewed: Jan. 18, 2012
Using suggestions from others: extra seasonings, black pepper, paprika, garlic, and substituting cream of mushroom soup, this was perfect for my picky husband, he doesn't like too many veggies so I added small cans of corn and green beans to meat mixture, it was great! I will make this again soon!

Apple Dip

Reviewed: Dec. 24, 2011
I was skeptical of the sweetness at first so I started with halving the sugar and vanilla, I ended putting it all in anyway, also I wanted a fluffy texture so I added an 8oz container of cool whip. I know that it was a different dip at this point but very good, served with apples and Stacy's Gingerbread pita chips(only avail @ Xmas Time) great light appetizer!

Baked Potato Casserole

Reviewed: Nov. 5, 2011
These are amazing! I scaled it down using the calculator on here but increased the sour cream, simply because I love it so much, but it probably wasn't necessary. When I mixed the wet mixture with potatoes and bacon I was concerned it wasn't enough sauce but it turned out great! Also I just sprinkled the chives on after cooking because I forgot to throw them in(I think it made them prettier!) Took a long time from start to finish but it wasn't hard or something I had to keep a close eye on. Worth the wait!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Apr. 13, 2011
Looking to save some calories? suggestion 1: Skip the breading, the fish will still be good! if you like crunchy fish though, keep the breading or do half with and half without. Suggestion 2: Skip the Chipotle mayo, double the honey lime sauce and when it comes time to make the slaw mix a small amount of mayo with the remaining honey lime and add a little ground cayenne pepper. For the taco set up I made up a little spicy fat free sour cream (franks red hot and sour cream.) No body at the dinner knew I was saving them calories, it was so yummy this way!

Slow Cooker Chicken Dinner

Reviewed: Apr. 13, 2011
Very good! the thing I love about recipes like this is that they are versitile, I only had yukon gold potatoes but they worked great! Also the creams soups I had were cream of chicken and herbs and a can of cream of chicken and mushroom. It turned out so well and my chicken went in frozen! Makes great left overs the next day!

Chicken Tortellini Soup With Zucchini and Tomatoes

Reviewed: Nov. 19, 2010
Made this for a little family soup cook-off and it was the hit. The adults and kids loved it! I accidentally bought some chicken tortellini and it was still very good, that was the only change I made. Also, it wasnt as quick as it seemed by reading the recipe, shredding the chicken just takes a long time if you're going for small pieces!

Crab Stuffed Mushrooms II

Reviewed: Nov. 4, 2010
I almost never make things exactly to recipe so here are my changes: Green onions instead of white, two cloves of garlic, crushed, when it was all done cooking I added salt, black pepper and a couple pinches of crushed red pepper. I omitted the pimento peppers and while it was cooking I didnt use all butter, I did half butter half EVOO, this made it a little runny so I added some grated parm/ramano cheese to thicken it up. So the calorie saving trick did not work. I had some left over mix and it was great as a dip with tortilla chips! I hope this helps!

Red Potato Salad with Sour Cream and Chives

Reviewed: Sep. 24, 2010
Love this potato salad! Make sure youre not shy with the salt after the it sits in the fridge over night or for a couple hours, also I added some white pepper, it had such a great creaminess. Everyone loved it a our work picnic! no one could tell that it was low fat, they appreciated that it wasnt super heavy like most mayo salads are!... I even used low fat plain yogurt!!

Chilled Strawberry Angel Food Dessert

Reviewed: Aug. 2, 2010
I gave this 4 stars because it was heavier than I thought, next time I'll probably only use one block of cream cheese and extra cool whip. I used strawberries and blackberries and that part was great!

Carrot Rice

Reviewed: Feb. 10, 2010
This rice is sooooo good! I used ground ginger, (1/8 tsp) and crushed up almonds instead of peanuts. I also substituted some of the onion for green onion, which tasted and looked great! Its really important that you used basmati rice and the cilantro was a key garnish! I served it with the broiled tilapia parmesan from this site to make for a healthy dinner that was very filling!

Juicy Roasted Chicken

Reviewed: Jan. 27, 2010
I impressed so many people when I made this. I have a hard time following any recipe EXACTLY so in and out side the bird I added some italian blend of herbs and paprika. I also very thickly sliced onion and placed it under the bird as another reviewer said, sooo wonderful! Don't pass this one up!!
