Fruit Crisp Topping Mix

Thank you so much! I'm a cook, not a baker, but my 4 young grandsons love baked desserts (ok, Nana loves them, too. Sue me.) I'll be making a crisp for them soon, and will have YOU to thank for their smiling faces. So simple, always on hand. What could be better? You rock!

Bloody Mary

I agree, the dill is a bit much for my liking. But I did find the pickle juice interesting, thank you Genevieve. I used tequila instead of vodka and turned it into a Bloody Maria. I think tequila complements the spices so much better than vodka. I've converted almost everyone I know into staunch "Maria" lovers, even the ones who say they hate tequila!

Dee's Mexican Rice

I made only one substitution, red peppers instead of green, because I had them on hand and omitted the corn, which I didn't have. I have to agree with Newcook, the turmeric and catsup overpowered the dish, masking the other wonderful flavors. That said, I really liked the the look of the dish and how easily it all came together. I will definitely try this again without turmeric and catsup. With the other spices and fresh tomatoes I think this could be a winner. Thanks, Sandy!

Black Bean Brownies

I added 1/2 tsp each of baking powder and baking soda. Otherwise just as presented. The brownies were quite good, although more like devil's food cake than brownies. Perhaps using just one of the leaveners, or adding chocolate chips or pudding will make them more chewy. But the texture was clean, very tender, and the flavor was intense chocolate, no off flavors at all. I used Hershey's Special Dark cocoa powder. These are going right into the dessert rotation at my house. In fact, I think I might double them to make a chocolate layer cake.

Grilled Pineapple

This was good, but I really couldn't taste any of the marinade. I only had 3 hours for it to marinate, but I was hoping to taste more flavors. I'll try it again, increasing the hot sauce and letting it sit overnight for sure.

Spicy Grilled Chicken

I always cut chicken breasts in half so they're thinner, and this recipe rewarded that, because with just 2 hours marinating the flavors really came through. I'm so tired of chicken marinades that don't really permeate the meat, but not here. The lime, garlic and pepper were very present. Sadly, the pepper flakes only ended up on half of my piece. Next time I'll use cayenne or hot sauce to make sure I get an even coating of spice. I served it with rice pilaf and grilled pineapple spears and was told to "Make this again!" We loved it! ****Update***** Made this for Mom and she only let put in a dash or two of hot sauce, afraid of too much heat. It was much worse for the change, tasting like lime chicken, with not much else going on. Do not omit or reduce the pepper flake or sauce, it's really needed to make this dish shine.

Summer Corn Salad

The best way to make this salad sing is to make the vinaigrette separately; whisk vinegar, basil, salt/pepper, then slowly whisk in oil, THEN pour over the salad. The dressing holds together better, and all the vinegar droplets get the benefit of the spices, making sure every bite is well seasoned. It's about the spiced vinegar being suspended in the oil. Just my 2 cents, but it makes a taste difference. I make a similar salad, but use green onions. And lemon in the vinaigrette. Otherwise, it's the same, and VERY tasty, especially if you dress it about 15 minutes before serving to let the flavors do their thing.

Ten Minute Enchilada Sauce

Very simple to make. Made per instructions and found the flavor much too strong. So I doubled the tomato sauce. Still had way too much chili powder and completely overpowered the chicken enchiladas I made with it. Because it's so easy I'll try again using only 1-2 tbs chili powder. Note: I think it would work very well to season meat for tacos, perhaps 1/4 cup sauce for a pound of meat, more if using beef.

Dad's Hamburger Gravy

Too bland, even though I added 4 cloves, a pinch of red pepper flakes and used all the onion in while cutting the meat and milk in half. It still required a lot of Mrs. Dash Extra Spicy and salt. However, my 22-yr-old nephew liked it, so 3 stars. Still, I won't make it again.

Slow Cooker Pulled Pork

Do not, do not, do not use DIET Dr. Pepper. I did, and while the tenderloin was certainly pull-apart tender, there was zero flavor imparted to it from the soda. Might as well have used water. I'm trying to fix it now, with a little Cholula and some brown sugar. If that doesn't give it some kick, I'll just be sure to use plenty of sauce. I'll update this review after. But still, 4 stars because it's my bad for not using a sugared soft drink. ****** UPDATE: I wrapped the pork, juice and all, in foil overnight. Today, it was very moist and had just a hint of sweet from the brown sugar. So I went ahead and sauced it, reheated on the stove, and served it. We all loved it, so it now gets 5 stars. So easy, so good. I'll be making this again with a pork loin to save $ and the root beer as the recipe states, plus a dash of liquid smoke, just because. If I'd followed the recipe exactly it would still be 5 stars.

Sweet Restaurant Slaw

As written, it's just a tiny bit too sweet for my family, but with the addition of another 1/4 tsp. salt it was perfect; DH raved about it. So, b/c salt is a personal preference, this gets 5 stars, because this is SO easy and VERY VERY close to KFC, his favorite slaw.
