Mom's Stovetop Pork Ribs

I was nervous cooking this recipe since my son loves BBQ ribs and normally doesn't like anything that seems "different" from that. Boiling ribs is something I've never done. So, I had a big pot, probably put too many ribs in but it started boiling down and all of a sudden my son is there saying "what smells so good?!" When it finally boiled down where we could eat them (it did take a very long time), I was still nervous...rosemary and lime instead of BBQ. Then we tasted them. We loved them! Add our thanks to your mom for this delicious way to cook ribs!

Asparagus Lasagna

Wow. I really enjoyed this recipe. Made it this morning thinking I'd have it later on....and then I sampled (and sampled!!) as soon as it came out of the oven. I had a package of small diced ham and fresh asparagus. Sauteed both of them in a pan before adding to the dish. Baked it at 450 for 25 min. The cheese on top was brown and crispy and the whole thing tasted delicious. Thanks for a - for me - new and innovative lasagna!

Salsa Chicken Rice Casserole

I really liked this. Thought it was very easy to make (although it did call for a lot of bowls!) I found myself thinking that "minute" rice would have taken a lot less time and I did brown the chicken instead of boiling it....but still...it was delicious and it held up well as leftovers too. Thanks for a great recipe.

I really liked this dish. It was simple and delicious. I didn't have chicken breasts, so I used thighs. I didn't have cream of chicken (thought I bought it but it was cream of celery instead) and it still tasted great. Thanks for this recipe!

Tater Tot Casserole III

I just loved this recipe. My only changes were to leave out the butter in the mix (I did use it with the cornflakes)and to leave out the Parmesan cheese (only because I totally forgot it!) It was the perfect comfort food for a freezing, snowy day. I enjoyed the crunch the cornflakes provided on the top. Excellent and Easy.

Creamy Chicken Casserole

I probably should have taken advice from some of the edited recipes - water chestnuts, French fried onions, etc. This was not my favorite recipe. In addition, when I reheated it in the microwave, the chow mein noodles lost any crispness.

Chicken Adobo II

I am always looking for chicken recipes and thought this one sounded interesting. I loved it. (I forgot bay leaves so that will be for next time). I served it over noodles and loved the sauce and the chicken. I used just skinless thighs - wasn't sure if it was supposed to be a skin-on or skin-off recipe. Will definitely make again.

Ham and Noodle Casserole

I loved this recipe. I'm not usually a fan of Swiss cheese, but it does go great with the ham. I made it quick and easy with some store-bought diced ham (and probably used a little more than the recipe called for). It may have been more of a different taste for my son, but he's not the one rating this and I really liked it. Thanks for this one!

BBQ Pork for Sandwiches

I tried this for the first time today...so easy. Pulled apart the pork ribs and poured the sauce over it. Then, because no one else was home to eat it, had to cover it and walk away. It was so good that I was afraid there wouldn't be any left for dinner if I didn't stop picking & eating. Delicious and easy, doesn't get any better than that! I bought coleslaw to put on top. Had a pulled pork sandwich that way once and thought it added a crunchy bit of extra flavor. Yum. 7/22/11 Have to update this. Both my son and husband said this is the BEST BBQ pulled pork ever. When you realize how easy it is, it makes it even more outstanding. Thank you again.

Shoepeg Corn Casserole

This was absolute comfort food. Excellent taste. I added more of the veggies (I bought frozen rather than canned beans/corn) and put both whole packages in. Added some extra soup/sour cream to compensate. Just delicious.

Quick and Easy Green Chile Chicken Enchilada Casserole

I thought this recipe had a very nice taste. I was lazy and didn't char the tortilla and I boiled the chicken as someone else suggested - and I got confused about the layers (that's ok, I do it with lasagna too!) but despite all that, the dish turned out marvelously tasty. Had it for dinner last night and lunch (and dinner!!) today. Yum.

Pizza Casserole

My son said "Mommy, this is the best thing you've ever cooked." I've waited 12 years to hear that. He cleaned his plate AND it had onions and peppers (two things that usually find their way to the side of the plate to be scraped off later). Thank you for an quick and easy recipe that my family enjoyed.
