Ranch-Style Thighs and Breasts
Not sure if I did something wrong but it was really soggy not crispy at all. I even put the chicken on a baking rack on top of the cookie sheet but then I had to broil both sides just so it wasn't spongy. My toddler ate it with ketchup but I didn't really like it. Maybe I had too much ranch dressing or something.

Spinach Frittata
Pretty tasty although with the ham already being salty I found it a bit too salty so would probably either not add any additional salt or maybe just half. I'm trying to get my 12 month old to eat more spinach and eggs and she ate a bit of it! I added 2 more eggs as I found it quite spinach dense with only 3. A tasty dish, even better with salsa on top!

Pinto Bean and Sausage Soup
Quite tasty. I had left over pinto beans from a different recipe so it made the prep much faster and easier as I only had to cook the other veggies. My husband and I don't care for smoked meats so used a turkey sausage to keep the fat down and it was very nice still. Will make again.
