Mini Key Lime Pies

Very easy, and very tasty! I couldn't find key limes, so I used regular limes, and it still tasted good.

Mustard Vinaigrette

Very good, but I added salt only to taste. The amount called for in the recipe seemed high, and it was plenty flavorful without the exact amount.

Pork Tenderloin with Mustard Sauce

I thought this was excellent. I followed the marinade exactly. I subbed plain, nonfat Greek yogurt for the sour cream and used the olive oil mayo for the sauce and it was delicious. We put the slices onto rolls and had it like a sandwich with the sauce as a spread. Two thumbs up!

Simple Macaroni Salad

Not too bad, definitely lighter than most macaroni salads. I'd make again. However, be forewarned, this makes a TON. It'd be a good bet for a potluck dish.

White Chocolate Raspberry Cheesecake

I made this for dessert for some friends that were coming over for dinner and then ended up sharing with coworkers and everyone loved it. I used Oreos for the crust and used raspberry all-fruit for the raspberry sauce. It didn't taste that white chocolate-y, but it was still delicious. I also took the advice of some other reviewers and made it in a water bath and then cooling in the oven for a few hours post-baking. No cracks here! Loved it!

White Bean Chicken Chili

Delicious. I would definitely make again. I used a bag of frozen corn instead of fresh, which tasted fine. Next time, I'd add an extra can of white beans and maybe a jalapeno for some added kick.

Jalapeno Popper Spread

This was a huge hit at the super bowl party. I used about a half a can of diced hot jalapenos and it was plenty to give it some kick. I put the mixture in a pyrex pan and baked it...I think that crisp it gets on top is worth the baking rather than microwaving. Served with pretzels and triscuits, everyone loved it. Definitely adding to my arsenal of fun apps to bring.

Creamy Vegan Corn Chowder

Very good. Since I am not vegan, I used chicken bouillon and skim milk (not soy). For the corn, I used frozen white corn and a part of a bag of mixed veggies. I blended a portion as well to thicken it, and that worked very well. It didn't thicken up as much as I'd like despite using two tablespoons of flour, but it was still very tasty and surprisingly filling. I will definitely make this again, the boyfriend loved it.
