Jenny's Grilled Chicken Breasts

Very, very, very, very good and easy, easy, easy. Oh, did I mention that it was good and easy. I let the chicken sit in the lemon juice (I didn't have quite enough so I threw in some lime juice) until my grill was ready, maybe 10 to 15 minutes. Served it with Mexican rice and green beans, delicious, fast and low cal. A triple play.

Black Beans and Pork Chops

Um, WOW - who would have thought that a recipe so simple and quick would be so delicious and filling. I did the bed of rice and the meal was complete and FILLING. Easy to make and just plain good. Easy and recommended.

Applesauce Oatmeal Cookies

Didn't have white flour so I used wheat flour, gave the cookie a bit of a darker color, but tasted good. We added raisens and cranberries and a little nutmeg. The cookies were very good, soft but not too soft. I especially liked the fact that they weren't overly sweet. For a 'healthy' cookie, I would recommend it. My wife said it cries out for a cup of coffee when your eating it. Oh, hated the fact that it tells you the calories per serving, but doesn't tell you how many cookies equals one serving.

Island Shrimp and Rice

Okay, so I changed up a lot of things and it came out GREAT. My wife doesn't like REAL spicey so I left out the cayenne pepper. However, I added about a 1/4 cup of yellow pepper and a 1/4 cup of orange pepper which I ran through a food processor. My 'heat' spice was Tony Chacheres (which may be a bit local) and I used it sparingly. In the end, with 10 minutes to go, I added a 1/4 cup of frozen broccoli flowerettes which I thawed and trimmed the stems off and threw in both for taste and color. I will be fixing this dish again.

Broccoli Cheese Chicken

An extremely easy dish to make. The chicken breasts came out very tender and moist. Instead of noodles, I used Zaarain's Jambalaya rice. The rice was spicy but not too much so and the 'sauce' leftover in the chicken pan went over the rice and chicken. Overall, good dish, I'll be making it again.

Slow Cooker Pork Chops

Okay, maybe sauerkraut just doesn't work for me. On the plus side, it was easy, the chops were moist (not dried out) - but I ended up scrapping the kraut off and making a baked potato which I chopped up the meat and put it in with the potato, it worked. However, I won't be making this meal again.

Cilantro Lime Cod

It's probably just me but ... the dish really didn't do it for me (and I was looking for something different to do with cod). Cleanup was easy, the recipe was easy but it didn't tell me to leave the peel on the lime or off (I took it off). Didn't tell me if I was suppose to eat the lime/garlic/onion mix or scrape it off before eating (I tried it, then scrapped it off - lime taste/flavor way too strong with it on). I won't be doing this one again. But yes, the fish was very moist (how are you suppose to tell if it's flaky when it's wrapped in foil?).
