Sweet and Tart Vegan Granola Bar
Love this granola recipe that does not need dairy or oil! I made it for my daughters first swim meet and shared with friends to rave reviews. I did not have the correct pan size, but it was solid enough to shape into the perfect sized rectangle in a larger pan. The mix looked dry, but it baked up perfect with enough moisture while still holding its shape. Making right now for a weeks worth of quick snack on the way to swim practice.

Best Toffee Ever - Super Easy
So good and so easy. I am a beginner and even I was able to pull this off. After reading all of the reviews I was very confused about weather to stir occasionaly or constantly. After a little internet research....I followed the directions directly and stired occasionally. I used a heavy enameled cast iron pot- 2qt. And a wooden spon with a whole in the middle. I stired occasionally and gently. No butter separation and no burning. I tested my thermometer out on boiling water to make sure it was accurate. When the correct temp was reached I tested it out in ice water and my drop easily broke in my fingers. I did follow others suggestions and added vanilla. This has great flavor and just melts in your mouth. I wish I had added nuts to the top- very thin or powder dusting of nuts would be perfect. Going to make these for gifts for the holidays this year.

Dawn's Candied Walnuts
These are very very good! I own a candy thermometer...that I have never used until now. I am a beginner and these were very easy to make. I did check out my thermometer in boiling water to make sure is measured accurately. I used my enameled cast iron pot which was perfect because it heats evenly with out any 'hot spots'. (2 qt pot) I made two batches today. On the first batch they boiled for more than 8 min with out reaching the soft ball stage on my thermometer. On the second batch I turned up the heat just a bit and had not problem reaching the soft ball stage. Both batches turned out great, however the second batch looked nicer- better color and a little better crunch. These will be great gifts for Christmas. Somthing about the walnuts in this recipe is perfect. I am not a big walnut fan- but they are great in this recipe.
