Italian Dressing Mix

This is my go to recipe for everything from salads to marinades. It's so easy to make a big batch and keep it in the cabinet. Change up the oils and vinegars for totally different tastes. I decrease the salt in half.

Cilantro Edamame Hummus

This was so fantastic! I might not have added quite a 1/2 cup cilantro packed, but other than that I made it exactly as shown and my guests just raved about it. No one felt guilty about dipping away. Even non-cilantro lovers didn't notice at all and sucked it down before I could tell them what was in it! Thank you for a fabulous recipe we can feel good about serving.

Cherry Balsamic Short Ribs

This was so great! I couldn't find frozen cherries so I used sour cherries in a light syrup and replaced the syrup for the cherry cola. Doubled the recipe and cooked in a covered roasting pan with no problems. We also served the left over veggies instead of discarding. they're not pretty - but oh so tasty. Thank you for an outstanding recipe!

Spooky Witches' Fingers

Fabulous recipe! Added a bit more extract per other reviews and 1/2 the salt. Colored them green and used the whole almonds. Another reviewer said to roll them about the thickness of your pinky and that was perfect. Squish the rolls twice for "knuckles" and add lines with a knife. I added 2-3 mini chocolate chips to each for warts. They were a huge hit with neighbors and co-workers!!

Quinoa with Chickpeas and Tomatoes

I needed a quick lunch and had canned diced tomatoes with olive oil and garlic added. I drained the tomatoes reserving the liquid. Added water to the tomato liquid to equal the 1 3/4 cups and cooked the quinoa in that liquid for extra flavor. Tossed in all other ingredients as called for. Substituted the canned tomatoes for the fresh, cilantro for the parsley, decreased olive oil in 1/2. It was fantasic and soooo quick!!!

Joy's Prizewinning Trifle

We attended a St. Patty's day party so I used Pistachio pudding and substituted Plain fat free Greek Yogurt in place of the sour cream to make it a bit healthier. Everyone LOVED it and couldn't believe it was basically a fat free dessert.
