Baked Lemon Chicken with Mushroom Sauce
I just used this recipe as a sort of stencil: I marinated the chicken for an hour in about half the juice of a lemon, a teaspoon of thyme, one large clove of garlic and a few tablespoons of olive oil and some lemon rind. I cooked the chicken the same way. I made the sauce with four cups of mushrooms and a half stick of butter. I then added about a half cup of chicken broth, the juice of one lemon, about half a teaspoon of thyme and a clove of garlic. I brought it to a boil and then simmered and reduced it. Even my brother who hates chicken really liked. I'll definitely make this again!
