Chocolate Chocolate Chip Cake Cookies

Very easy and tasty! I halved the recipe and made with almonds instead of walnuts. Nice when you want more than a cookie and not quite a cake.

Apple Bread

I thought this turned out very well. I followed others' advice and used applesauce in place of oil and used half white and half brown sugar. It was nice and crispy on the outside and moist and had a great apple cinnamon flavor. I didn't have any problems mixing it (used my Kitchen Aid mixer though) and it was a thick batter, so I could see how mixing it by hand would be difficult. I'd recommend using a mixer if you have one. Also, beat the eggs before adding it to the mix.

Sour Cream Chocolate Cake

Fantastic! Very moist. Made for a friend's birthday and they were impressed (as was I)! I used dutch cocoa and was kind of concerned about how it would fare, but it was delicious.

Mama's Asian Chicken and Rice

I've never had a penchant for Asian cooking, though I love the food. Just never seems to come out right when I do it, but this came out very well. I followed the directions until the corn starch part. I just didn't think it needed much thickening. I also did not have Chinese Five spice, but had fresh ginger, so I used that based on another reviewer's suggestion. Wonderful flavor! Thanks for sharing :)

Chewy Coconut Cookies

Really good cookies. Coconut is my flavor of choice recently and these were a great solution to that craving! Very satisfying. I really did only have to have just one. I thew some milk chocolate chunks in the second batch, but the basic recipe is spot on. Thanks for sharing!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Oh my gosh, these are some of the best ribs I've ever had. I grew up in KY and live in TX, so I know my ribs :) I leapt at these when I saw the recipe included bourbon (whiskey). They are falling off the bone, flavorful...amazing! I will make this again and again.

Lemon Cream Cupcakes

Holy...wow. These are amazing cupcakes. Not too lemony, not too sweet-just right! The frosting is to die for. I upped the ante by adding coconut flakes to the frosting. Magnificent! I didn't have as much sour cream as the recipe yielded, so I used what I had on hand. I would imagine that these would be even creamier and more delicious with more SC.

Can't Tell They're Low-fat Brownies

Okay, I didn't have prunes, so maybe that makes them better. I used applesauce as I've read it's a good substitute. Man...they were barely edible. As some said, I'd rather just have a butter-laden brownie. Maybe I'll try again with prunes.

Polenta with Rosemary and Parmesan

I really liked this. My husband did too! I added some butter and just a bit of cream and olive oil. Otherwise, directions followed. I liked the rosemary, and used just a bit more than was called for, but I like that flavor. It was fantastic with our dinner. I'll make this again.

This was very good-very crunchy and refreshing. I felt like it was missing something that I couldn't really put my finger on. I think I must have eaten it with tzatziki sauce in the past. My husband loved it.

Marinated Greek Chicken Kabobs

I, like others, feared that this would be bland, but I trusted the reviews and the recipe and went sans-garlic. It was fantastic. And healthy, which is wonderful! The feta cheese was the kicker. I didn't have oregano or sun dried tomatoes, but I used canned roasted red peppers in place of the tomatoes and they were delicious. Used fresh basil and dried rosemary. Served as chicken breasts and just grilled the green pepper straight on the grill. It was juicy and very tasty. Will make again.

Cream of Cauliflower Soup I

So, I had this gorgeous head of cauliflower, it's fall, so, I wanted to try soup. I looked around and got a general idea of what I wanted to try and thought this recipe sounded tasty. I didn't have leeks, so just used an onion, used salted butter, and garlic. Always garlic! Instead of steaming the cauliflower, I roasted it with a drizzle of olive oil, salt and pepper, until nearing tenderness in the oven around 425. I added just a bit of water and covered with foil to steam. I don't think anything tastes better than roasted or grilled veggies with that combo, and I thought it might make this more flavorful which I needed since I didn't have tarragon on hand and just used what little fresh thyme I had. Also no cream or white pepper, just added a bit of milk after I pureed the soup and a small amount of cheddar and parm. My husband mentioned several times how good it was and I agreed. Very nice flavor, rich, but still subtle. Will make again.

Italian Spaghetti Sauce with Meatballs

Holllleeeyyy these meatballs are good! I used a bit less Italian breadcrumbs, fresh garlic (I despise garlic powder), and added fresh chopped basil and oregano. Oh my, these are tender, flavorful and delicious. I dare say the best meatball and sauce I have had. Sorry mom.

Quick and Easy Brownies

Holy these are good. This was also my fiance's response. The batter was amazing, so I had high hopes, but these are moist, chewy, chocolately, crunchy on top-perfect brownies! Yum! I also just used 1 cup of flour, otherwise followed the recipe exactly. It was very easy-I just mixed by hand.

Grandma Johnson's Scones

Quite good! This was the first time I'd ever made scones. I used frozen mixed berries (blueberries, raspberries, blackberries) and cut the recipe to 4 servings. They taste delicious and I still ended up with 6 scones! I will make this again.
