Butternut Squash Soup with a Kick

OMG - this was SO VERY good! I must've had a larger squash as I needed extra liquid to cook the squash in. Then poured off quite a bit, before adding in the coconut milk to make a thicker soup. After several tries, found about 1-1/2 jalepenos work best - not too hot, not too tame.

Tortilla and Bean Soup

Excellent! So very easy to make & delicious. I didn't know what ranch beans were so I just used 2 different types of kidney beans (dark red & light red). I did use hominy - it was OK, but might use corn in the future. YUMMM!

Garlicky Baked Butternut Squash

Oh MY....how awesome was this?! I followed a few others' suggestions & cut the squash in smaller pieces, set the oven @ 375 deg, stirred every 15 minutes, and sprinkled with parmesan cheese 10 minutes before it was done; total cooking time was 50 min. YUM!

Chicken Marsala

This was an awesome and very quick version! I used double the amount of mushrooms and ingredients to make the sauce & served over egg noodles. Wonderful - sauce thickened up nicely & was very tasty! Thanks!

Chocolate Wave Zucchini Bread

I've only ever made muffins from this recipe, but I'm sure the bread is just as good. An even better twist was to make the whole recipe in chocolate (don't split the batter & double the amount of chocolate, etc.) - YUM!

Quick Poached Salmon with Dill Mustard Sauce

This has to be one of THE best & THE easiest 'fancy' dishes to make. I've made several times & each time has turned out fantastic. I usually make extra & make salmon patties from the leftovers (when there are any!)
