Chicken Scarpariello
This is an excellent dish as is. I make this often for family dinners as EVERYONE likes it. I've made two changes - I substitute 1/2 the flour with Romano Cheese and when sauteing the garlic and shallott I add mushrooms. Delicious!

Zucchini Cobbler
Surprise, Surprise! The best way to use those zucchini that just get too big! It really does have the texture and taste of apples. I just served it as "fruit" cobbler and made everyone guess the fruit. No one guessed zucchini - but they ate it all! The hardest part of the entire recipe is preparing the zucchini!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)
Excellent recipe. Fresh tomatoes & basil make it a hit. I definitely recommend salting & drying the zucchini. I chopped up the ends of the tomato, left over basil, parm & garlic and sprinkled on top before baking. Delicious! A definite do-over.
