Stuffed Strawberries

Five stars for creativity! Super fast & easy to make (once I put away the knife & grabbed my small melon baller). The filling needed more sugar for my taste. I couldn't wait to play with the recipe. Last night I made again adding ingredients to make more of a traditional no-bake cheesecake for the filling. I added more sugar, a couple scoops of cool whip, some melted feta cheese and some graham cracker crumbs. I couldn't stop eating the filling it was so good! At the end I added cocoa powder to make chocolate cheesecake. These were amazing too! Topped them with graham cracker crumbs and oreo crumbs for the Chocolate ones. These would be fun to make with the kids for Valentines Day and let them play around with the ingredients. Thanks for the great idea!

Restaurant-Style Prime Rib Roast

This is the best tasting prime rib I have ever made! The seasonings seem very simple but they end result is so flavorful but does not overpower! Great recipe!

Creamy Au Gratin Potatoes

This is a great recipe to bring to a pot luck as they do really well in a crock pot. This will not replace my favorite Au Gratin recipe but I will definitely make them again when I need to serve the masses. I use basically this same cheese sauce poured over bow tie pasta for a really good no-bake mac & cheese too.

Enchilada Sauce

Awesome! I will never buy enchilada sauce again! This is much closer to the mexican restaurant enchiladas I like than anything else I've found. It can be too salty if you use regular chicken broth so I would recommend reduced sodium broth. (I am a salt-a-holic so this is something coming from me!)

Caramelized Onion and Horseradish Smashed Potatoes

These were a nice change from my regular garlic mashed potatoes. I still prefer the garlic but will make these occasionally. They're excellent fried up the next day & smothered with cheddar cheese!

Roasted Garlic Mashed Potatoes

These are sooo good! I probably quadruple the amount of garlic though. Even then I sometimes still need to add a dash of garlic powder to get the garlic flavor I want. I also always use red potatoes or Yukon Rose as they are a little sweeter and creamier.

Chipotle Crusted Pork Tenderloin

Excellent recipe! The combination of spicy & sweet is delicious! I have made this many, many times now & it is always a hit. I have been asked for the recipe several times. The only change I make is to reduce the Chipotle pepper down to about 1 - 1.5 tbls. This is plenty spicy! If you always order the hottest buffalo wings you might want to use the full amount but if not, you'll definitely want to cut back on the chipotle.

Chicken and Red Wine Sauce

This is so good my kids always ask me to make this dish! The only change I make is to use boneless skinless chicken thighs rather than breasts because. The thighs add a little extra flavor & are so moist they are basically fool-proof to cook. I usually use Pinot Noir for the wine but have used several other reds always with great results. I usually serve this with Roasted Garlic Mashed potatoes also from this site & a side salad. Delicious!

Premium Pizza Crust

Finally a pizza crust recipe that tastes like it's from a pizzeria! I have made this now several times (always using the faster sponge method) and it has turned out great each time. My kids don't want to order delivery anymore! It is so easy to work with I am able to get paper-thin crispy crust for me but it also makes really good hand-tossed style for the kids. I transfer it to parchment paper and bake directly on the oven rack for a crispier crust. I also pre-cook the crust for about 5 minutes before adding my toppings. I just can't thank you enough! I've been looking a very long time for a great pizza dough recipe.

Spinach and Strawberry Salad

This is a really good salad! A little too sweet for me as written - I usually use about half as much sugar. Also, toasted almonds sprinkled on top (about 3/4 cup) takes away some of the sweetness & really makes this salad.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

These ribs were great! I have made them twice now. 1st time I took advice from others and went elsewhere for a more flavorful rub- But that really wasn't necessary at all! The sauce on this recipe is so good you do not need anything more complicted than salt & pepper. (Sauce is definitely spicy so if serving to sensitive taste buds I would recommend cutting back on the cayenne. Even cutting it in half I think would still give you a really nice bite & you wouldn't be scaring off too may people with the spiciness.

Marinated Pretzels

I make pretzels similar to this all the time & everyone seems to love them. I only use about 1/3 cup of oil & do not bake them at all. They dry out after an hour or two & are ready to eat. I took away 1 star because you definitely don't need that much oil & Why bother baking them? I use the tiny twists & only add the ranch dressing mix & dill to taste.

Creamy Spinach Tortellini

Unbelievably good! Everybody loved it! Also really hard to screw up! I added 2 cloves of minced garlic with the onions and substituted diced canned tomatoes since I had them on hand. Absolutely delicious!! I also threw in some pre-cooked jumbo shrimp and sprinkled some pine nuts on top. Can't wait to try this one again!
