About this Cook
I'm a PhD student but I love to make time for cooking. It gives me a nice, focused task and I prefer eating at home to eating out.
My favorite things to cook
Potatoes, cauliflower, rice, anything with chiles.
My favorite family cooking traditions
I'm from a Texan/New Mexican family so our food is often simple and spicy. Beans, corn bread, potatoes, chile. That's how we do.
My cooking triumphs
The best thing I ever made was a flourless chocolate cake. It was SO GOOD.
My cooking tragedies
I had to bake my own birthday cake and it got stuck in the pan. I bought cupcakes and told everyone I tripped and dropped the original cake.

Banana Nut Muffins
This is a simple and good recipe. Cook time in my oven was a bit shorter than described here (about 15 minutes per batch). I doubled the recipe, but omitted the lemon zest and walnuts. If I make these again, I might add some cinnamon or nutmeg and some vanilla extract. Overall, though, very good recipe.

Quick Quiche
This was a very good recipe. Easy and quick to put together and very tasty. I added half a cup of frozen spinach to mine and it was fantastic. I think next time I will add some tomatoes or some red bell pepper. This would also be really great with shrimp.

Slow Cooker Posole with Pork and Chicken
Great foundation recipe. I substituted 2 fresh jalapenos for the chipotle (that's more traditional to me) and doubled the garlic. Next time, I think I'll add some canned tomatoes, too. As promised, it does freeze well. Serve with radishes, cilantro, and a tortilla for traditional New Mexican flair!
