Seafood Enchiladas

Ok, what is up with people making "Enchiladas" with FLOUR TORTILLAS!! Enchiladas are made with corn tortillas!! The only thing i could probably call these is a burrito.

Roasted Lemon Herb Chicken

This recipe is great! I just mixed all the spices with the lemon juice and olive oil and rubbed the whole chicken inside and out. I wrapped it in foil for about 3/4 of the way and then uncovered it to brown. The results were a flavorful and juicy chicken that my whole family loved.

Chicken and Mushroom Saute

WOW! Delicious. I pounded the chicken very thin so it won't take forever to cook. I also seasoned the chicken before i added it to flour, it makes a big difference. I used fresh mushrooms,and chicken broth instead of the bouillon. Another thing don't add the cornstarch straight into the pan. In a seperate bowl mix it well with a little chicken broth or water and then add to pan. This prevents lumps. Thanks for a great recipe!

Win's Shrimp and Spaghetti

This recipe is the easiest to make and the most delicious. The recipe calls for 1 cup of butter, at first i was a little hesitant but oh well, once in a while is not going to hurt,especially when it is this good! The creole seasoning and the teriyaki add lots of flavor. Thanks for the recipe, it is a keeper!!

Banana Cake V

As per suggestions, i used 3/4 c white sugar and 1/2 c brown sugar. Next time i will use 1/2 cup of each sugars instead since it was a little too sweet for me. It is also very important to use cake flour if you want that light and fluffy texture of a cake. Overall the cake was delicious and will make again. Used the whipped cream,cream cheese frosting. Great combo!

White Chocolate Macadamia Nut Cookies III

I liked the flavor of the cookies but they were very dry and not sweet enough. I only made half the batch and saved the rest to see what i can add to make them a little better. I think i will add some more butter or marg. and more sugar to the rest of the batch.

Banana Banana Bread

A very moist bread with a good texture. The only thing is that it is not sweet, it needs a little sweetness to make it perfect. Next time i will add 1/2 cup white sugar like some suggested. I'm sure it will be perfect then.

Best Carrot Cake Ever

The overall flavor of the cake was good,but i found it too be a bit dry. I used a 13x9 oblong pan and by 30 minutes, it was a little bit overdone. I guess because i pre-heated oven for over an hour since i was baking other things prior to this cake. Next time i will not strain the juice from pineapple and add it to batter maybe it will make the cake a little more moist. I made the whipped cream cheese frosting submitted from Tom in this web site, It was so wonderful that it made up for the cake's dryness. With a bit of changes this cake will be great.

Whipped Cream Cream Cheese Frosting

The frosting turned out divine! You have to have patience when beating the heavy whipped cream it takes about 7-10 min depending on the speed of your mixer. If cream cheese is too hard, put in microwave about 15 sec's. After i made it i put it in the fridge for a few minutes before i spread it on carrot cake recipe i made from this web site. The frosting totally made the cake!

Hummingbird Cake

I was not impressed with this cake. It had more of a banana bread taste and texture than a cake. The ingredients like the banana,pineapple and pecans go great on a store bought yellow cake mix.

Basic Cream Cheese Frosting

Okay recipe. I added 2 cups of sugar because 4 would of been way too sweet. Should of added less vanilla because that is all i tasted after frosting was done.
