Catherine's Spicy Chicken Soup

WONDERFUL! I am still new to making homemade soup, and this was an easy, delicious recipe! I used 6 large chicken breast halves and there was a TON of chicken- I might use 4 or 5 next time. I substituted black beans and small kidney beans for the chili beans, and used Medium salsa. (I don't enjoy foods that are very spicy, and this was perfect for me. My boyfriend loves spicy and he absolutely loved it as well) I started to worry when I added the sour cream, as the color was much different than all of the pictures submitted on the page, but it darkened after simmering. SO happy I tried this- definitely a keeper! Thanks so much!

Chocolate Pretzel Rings

Great/Easy recipe! I use the Snyder of Hanover 'Snaps' which are the square shaped pretzels, and alternate between milk chocolate hershey kisses and the hersey 'hugs' which are the white/milk chocolate swirl ones. (The hugs seem to melt better and are usually more popular). I usually stick them in the freezer to cool and leave them in either the fridge or freezer until serving (I personally like them better a little chilled). They are always a hit and fun to make! Very versatile too, as you can simply change the m&m colors for each holiday/get-together!

Creamy Rice Pudding

LOVE this recipe. My family is constantly asking me to make this ever since I tried it out. Definitely take one of the other user's advice and make sure not to add the sugar until the rice is thoroughly cooked/ to the softness that you would like it at! One of my other tricks is to plump the raisins. To do this: Place the raisins in a small saucepan, and add just enough water to cover them. Put the heat on low until it comes to a light boil, then turn off heat and cover for 20 minutes or so. Drain and add raisins when the pudding is ready. I also add a small dollup of whipped cream and sprinkle some cinnamon over top when complete... DELICIOUS! - Thank you for this recipe!

Classic Tiramisu

This was my first time making Tiramisu (I made it for Valentine's Day) and although it didn't come out as great looking as many of the other ones in the pictures, it was DELICIOUS. Like some of the other reviews, I left out the coffee flavored liqueur and instead brushed the lady fingers with espresso. I also substituted mascarpone cheese with a sour cream/cream cheese/ whipping cream recipe provided by one of the other reviews.. It must replicate the real thing pretty well because it tassted great. I'm looking forward to practicing and making this as beautiful at it was delicious- Thanks Carol!:)

Almond Strawberry Salad

This recipe was wonderful! I found sliced honey roasted almonds in the salad dressing aisle which worked PERFECTLY. I was unsure how the dressing would be at first (I thought the vinegar was going to throw it off), but everything worked perfectly together. I plan to make this over and over again- Thank you!

Baked Salmon II

This was the first salmon recipe I've tried, and it was AWESOME! I had never experimented with salmon before and thought hey, if it's this good, I should try some other salmon recipes... I was only disappointed with them. This is hands down the best. I usually add some dill weed and though I've tried it with jarred minced garlic, it is much better with fresh. As other reviewers have said, the amount of oil can be reduced a little bit. Instead of covering the fillets in foil, I wrap them completely and place them in a glass baking dish. Usually make with brown rice and steamed broccoli and drizzle the leftover juices over the sides... WONDERFUL! Boyfriend's favorite dish!
