Catherine's Spicy Chicken Soup
WONDERFUL! I am still new to making homemade soup, and this was an easy, delicious recipe! I used 6 large chicken breast halves and there was a TON of chicken- I might use 4 or 5 next time. I substituted black beans and small kidney beans for the chili beans, and used Medium salsa. (I don't enjoy foods that are very spicy, and this was perfect for me. My boyfriend loves spicy and he absolutely loved it as well) I started to worry when I added the sour cream, as the color was much different than all of the pictures submitted on the page, but it darkened after simmering. SO happy I tried this- definitely a keeper! Thanks so much!

Creamy Rice Pudding
LOVE this recipe. My family is constantly asking me to make this ever since I tried it out. Definitely take one of the other user's advice and make sure not to add the sugar until the rice is thoroughly cooked/ to the softness that you would like it at! One of my other tricks is to plump the raisins. To do this: Place the raisins in a small saucepan, and add just enough water to cover them. Put the heat on low until it comes to a light boil, then turn off heat and cover for 20 minutes or so. Drain and add raisins when the pudding is ready. I also add a small dollup of whipped cream and sprinkle some cinnamon over top when complete... DELICIOUS! - Thank you for this recipe!

Classic Tiramisu
This was my first time making Tiramisu (I made it for Valentine's Day) and although it didn't come out as great looking as many of the other ones in the pictures, it was DELICIOUS. Like some of the other reviews, I left out the coffee flavored liqueur and instead brushed the lady fingers with espresso. I also substituted mascarpone cheese with a sour cream/cream cheese/ whipping cream recipe provided by one of the other reviews.. It must replicate the real thing pretty well because it tassted great. I'm looking forward to practicing and making this as beautiful at it was delicious- Thanks Carol!:)
