Healthy living is an important factor in my family's lifestyle.  It is a conscious way of living that is ever evolving.  I have to say that this was not always the case, unfortunately, but I continue to make great strides by taking lots of baby steps.


My journey has had many twists and turns over the years.  What once was strictly a "Maternity" diet became a "Nursing Mom" diet.  After 8 years and 5 kids that sure enough went to the "Lose the baby fat" diet.  Life was good for a while and then the Hubs threw a wrench in the works and developed a resistance to Lactose.  .  He was so sensitive that if he read a label containing lactose he immediately doubled over in pain.  Seriously.  I had a huge challenge on my hands.  I love the guy so I rolled up my sleeves and spent hours in the market with a pad and pen jotting down notes, comparing ingredients and cost.  Countless hours on the Internet trying to find acceptable products he might enjoy.


My scope on all of this was very narrow at the time and I didn't broaden that view until said husband developed high blood pressure and triglycerides.  Oh yeah - and cholesterol.  Yikes!  This time I had a bit of help from our doctor and I tapped into the vast pool of knowledge from the Peeps on the Buzz!  I have revamped my way of cooking, baking and choosing the foods I serve my family.  We still have our "treats" now and then but everything in moderation - or so "they" say, right?


I was happy to see that  Mazola® would be my first Allrecipes Ambassador challenge.  I do not use much oil in my cooking or baking and the recipes we were given to complete were very low in oil content.  Mazola® promotes the importance of a healthy lifestyle, and it tastes good too! The first recipe I made was: Sweet and Spicy Salmon with Grapefruit Salsa 

My first concern was that the grapefruit was not going to work with some of my husbands meds so I had to improvise.  That man is always throwing a wrench in the works!  LOL  But seeing as I like him so much I got creative.  I made a hot and spicy salsa to go over the salmon.   We loved the seasoning for the salmon and think that it would be wonderful on a cedar plank on the grill.  It went well with the salsa and I served it over some rice I made with garlic and a bit of fresh parsley.  Here is how that turned out-



The second recipe was equally as delicious: Pork Carnitas with Cilantro Tomatillo Sauce

Well dang!  We are not much for tomatillos and they are hard to find at the market to boot so again, I improvised.  I used pretty much the same salsa for this recipe as I did the salmon.  I also ended up making a small pork loin in the slow cooker because I did not have the time available to make as the recipe directed.  My family prefers a shredded meat in their tacos and this method worked nicely and the meat just fell apart.  Very tender and the flavor was delicious.  The only thing I added was about 1/2 cup of Southern Comfort Fiery Pepper (Tobasco®)  to the sauce.  Sometimes loin can be dry so this was a good addition for us.  Kicked it up a notch or two by making it a little saucy.  This is something that everyone enjoyed and said they would like me to make again.  Here is a peek at that for ya-

All in all these were two recipes that not only were healthy and light but they were super easy to prepare and very flavorful.  Winners for my family!

I had fits the last time I posted a blog too. The photos were X's that you had too click on to see. Deep sigh. Have missed you blogging, nice to see you back and I liked photos. I want salmon now! You have certainly made me curious about the Mazola and its health benefits will have to look into it!

Bee-u-tiful pics! My hubby can't have grapefruit either. I don't know if you've heard of or have access to sour oranges but that would be a good sub. You can improvise by sprinkling oranges with lemon juice if you feel like trying it. :o)

Leaving a cake on the table to answer the doorbell and come back to find our 2 Great Danes chowing down on the "OMG-this-took-me-forever-to-make-and-decorate-for-Christmas-dinner" cake! Arghhhhhh!
