Salsa Chicken

Reviewed: Apr. 16, 2002
My kids just love this dish. the chicken comes out so moist. Not only is this dish kid friendly but also great for dinner parties. Your guest would never know you spent so little time on the dish. YOu can serve it for adults as well as kids depending on your side dishes you use. It is great my kids think I am the best cook, little do they know that this recipe is one of the easiest out there.

Slow Cooker Chicken with Mushroom Wine Sauce

Reviewed: Apr. 18, 2002
This recipe was really easy to make. I however, didn't cook it as long as it says on low. I only had it cooking for about 3 1/2 to 4 hours on low. It came out perfect, the chicken was very moist, but when I walked in the kitchen it didn't give off the great smell I thought it would. but it is a keeper.

Awesome Slow Cooker Pot Roast

Reviewed: Apr. 18, 2002
The first time I made this recipe I did cook it on high for the time it said, however when I did this the roast was very dry. I was quite disappointed. However, the second time I cooked it I cooked it on low for only 4 hours and it came out perfect. It was very good and the gravy was excellent on the potatoes. I will make this again and again.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Apr. 22, 2002
This recipe was a big hit at a BBQ that I went to. I made the salsa the night before and found it even better the next day. I also added crushed pinapple to it, I noticed that with all the fresh fruit and pinapple I didn't have to add as much jam to it. I also use a chopper to cut chop up the fruit. That cut the time in half. Though I think I might of chopped them a little to small, but still it turned out excellent. I also couldn't decide on what flavor jam to use so I used both Strawberry and Aprcoit. I also found with this salsa recipe you don't have to follow it exactly and you can add other fruits to it. My oldest daughter loved the salsa, but my two other didn't care for it, but they loved the chips. I found that if you use a pizza cutter for cuting the tortilla's it goes by much faster, I could cut 4 at a time. I also used I cannot beleive it is Butter spray instead of Pam butter spray. they turned out great. I know I will make this again and again for BBQ's and parties. Thank you.

Oven Fried Chicken II

Reviewed: May 1, 2002
This recipe was great. I made a few adjustments, I used olive oil, and used wheat flour instead of white, used drumsticks and a couple pieces of boneless, skinless chicken breast. It came out great. The kids loved it so much they wanted to each take a drumstick for lunch today. Clean up is so much easier. This will be a recipe I use again and again. You know it is good when the kids say it is better then KFC chicken. :)

Baked Dijon Salmon

Reviewed: May 2, 2002
This is one of the best salmon recipes I have come across, the coating of honey mustard sauce then the topping was a prefect compliment to the salmon. My oldest who doesn't even like salmon said it was pretty good. My middle child loved it but still took of the topping. My friend even came over during dinner and asked if he could have a bite and loved it, he is not a big salmon lover either. I will make this more often. no question.

Kathy's Roast and Vegetables

Reviewed: Sep. 10, 2002
This was one of the best roast recipes I have come across. I used a tri-tip because that is all I had it came out so tender it just fell off the fork, I will always use a tri-tip from now one. Because I didn't have enough potatoes or carrots for the stew I put in mushrooms and celery. I also seasoned the tri-tip with season-all before browning it. I used one can of cream of Mushroom with roasted garlic because I didn't have two cans of regular cream of mushroom soup. the mixture was terrific. the gravy this roast recipe made was so good, that we used it the next night over rice and the left over meat. My girls loved this recipe and told me to make sure I make it again and again!

Mahogany Chicken Wings

Reviewed: Dec. 9, 2002
I made these for my kids lunches(they get bored with just sandwiches all the time) and they love them, even cold. I did not have chili sauce so I used some chili powder. I also let them marinate for about 3 hours. I did not have the problem of the sauce sticking to the pan like some of the other people did. I used pam on the pan before cooking. I will be making this again.

Loaded Potato Soup I

Reviewed: Dec. 9, 2002
We loved this soup. I noticed too that it wasn't as thick as I like potato soup so I added a little cornstach/water mixture and that helped. I did not have onions on hand but I did have green onions so I added those to the potatoes and had them boil with the potatoes( I boiled the potatoes instead of microwaving them), because I do not like crunchy onions in my soup. But it really did taste like a baked potato. I topped it with crumbled bacon and extra cheese. We will be making this allot for those cold winter nights. It is a great comfort food!

Slow Cooker Chicken Cacciatore

Reviewed: Oct. 15, 2003
I actually made this 3 months ago and loved it, I forgot to put in my review until I made it again the other night. It is one of the tastiest and easiest cacciatore recipes I have found. My kids love it and there is never left overs, mostly if I have chicken legs in the pot. I also add a can of olives since my kids love them so much. And I love the fact I can come home from work and know that dinner is just about done, all I have to do is cook some noodles and make a salad.

I took these to a dinner party, and I kid you not they were gone within 10 minutes. Everyone was asking me for the recipe. I was thinking if they are that good do I want to share? :) I took the advice of another and added bacon, I also added some parsley. They are very easy to make. Thank you for the recipe!

Best Beef Dip Ever

Reviewed: Jan. 27, 2004
I made this the other night and we all loved it. We are big french dip fans, and this recipe so far is the best one I have found. It is great to come home and have your meal almost done for you. I did put the sandwiches together and put in the oven for a few minutes to let the cheese melt ontop. I really did like the sauce from this, my kids kept dipping thier french fries in it. A keeper if you are a working mom.

Down Home Macaroni and Cheese

Reviewed: Jan. 17, 2006
This recipes is very good. I only had Shredded Cheddar and Colby which worked fine. I also added a some pepper to the flour & milk mixture. I put extra breadcrumbs on top since we like a crunchy top. My kids and husband really liked it alot. It is a great comfort food on a cold winter night. We used it as a meal not a side dish. Will make again.

Lisa's Easy Chicken

Reviewed: Jan. 18, 2006
We loved this recipe. I actaully put the rub on the chicken the night before because we decided we didn't want chicken that night so I went ahead and prepared the rub and put it on the chicken. The next night, since I didn't have fresh tomatoes I used canned diced Tomatoes with Peppers, and onions. I also added some red peppers and some red Onion, mixed that up in a bowl poured it over the chicekn, and put it in the oven. the chicken came out tender and ver juicy. The tomato mixture was very good to put over it. I served it with herbed rice and green beans, it was a great meal. Will definately make again. NOTE: It says in the recipe that you take whatever leftover rub you have and put it in with the tomato mixture. I didn't have any rub left over. so I just added some of the spices to the tomato mixture.
