Zucchini Corn Fritters
Good! I added some chili powder and fried like I was making pancakes. We use them as tortillas with pollo asaso, pico and cheese.

Sausage and Zucchini Lasagna
I made it exactly as written, it was very good and filling. I'll probably add some onion and maybe some green chili to it next time just to add some kick
