Pollo a la Crema

I made this in the slow cooker and it turned out great. This is what I did. I put some chopped onion and the cup of chicken broth in the slow cooker. I put the chicken on top and poured the melted butter over it(didn't mix it so the butter would stay on top of the chicken). Since people said it needed more flavor, I salt and peppered the chicken and grated some fresh garlic on top. I put it on high for 4 hours and then mixed the flour with a little bit of water and poured it in. Then I added the cream. I added salsa instead of catsup for flavor and shredded the chicken up. An hour later it was ready to serve. Made Spanish rice for the side. Yum.

Spicy Squash Casserole

Instead of regular mayo I used garlic-herb lemonaise (Ojai Cook Brand). This added a great flavor to the dish. I served over some fresh baby spinach and orzo pasta. Delish!

Easy Cheesy Chicken Ravioli

This was good once I worked out the kinks. First of all, I cooked the ground chicken before mixing it with the cream cheese and carrots. I don't think the chicken would cook enough during the boiling. My first batch was a complete kitchen fail because they all came apart while boiling. I had gross cloudy water and slimy wonton wrappers with chicken bits. To avoid this I learned that you must make sure that they are sealed really well. You also need to be gentle and not overload the pot. Cook at a simmer and fish out gently with a slotted spoon instead of breaking them open by pouring into a colander. Do not cook for longer than the 3 minutes or they will break open. They froze well and I fried up the left overs in olive oil and they were heavenly.

Zesty Slow Cooker Chicken Barbecue

So easy! I was sold on it when I saw that you don't have to thaw the chicken first. It turned out great. I topped it with jarred jalepeno peppers.

Very good. I used Pace Picante Sauce because that is all I had and it still turned out great. I am planning on throwing the leftovers into some eggs and making a breakfast burrito tomorrow.
