Sourdough Bread III

I have made this several times now. Because I have a very small bread machine, I did half quantities and still got a pretty big loaf. Once, I forgot to add the dry yeast and remembered too late, so I left the bread to rise on a cool kitchen counter about 24 hours and it still rose well enough and had a good strong taste. By the way, I used all wholemeal flour and no added wheat germ. Thank you for this good recipe, Warren.

Refried Beans Without the Refry

I halved the salt to 2.5 teaspoons but it was still VERY salty. Otherwise, a good recipe. I shall make it again but with only one teaspoon of salt and probably add extra cumin.

Gigantes (Greek Lima Beans)

I followed this exactly the first time, but it was oily and needed more flavour. The next time, I used only a scant 1/4 cup of oil and added more garlic, pepper and mixed herbs. A drizzle of balsamic vinaigrette when serving made it perfect - just like they serve on the continent.

Grandma's Secret Pie Crust

This made a wonderful crust, even though I used wholemeal flour. I had a bit more than I needed so froze the extra dough. After three weeks I defrosted it to top a chicken pot pie and it was, again. perfect. A great recipe that will be used many times.

Apple Cake III

The only change I made was to omit the nuts from the topping, so I made double of the brown sugar mix. The result was a wholesome, tasty cake that everyone enjoyed. I used my homemade apple pie mix and homemade yellow cake mix made with half wholemeal flour. Since then, I have made it again with lightly cooked plums and it was very tasty. I recommend this for a quick, old-fashioned treat.

Biscotti

So quick and simple to make with few ingredients, yet the result is delicious! My first attempt ever at making biscotti, so I chose this recipe for the short ingredient list. The results were so good I don't need to try any other recipes. Perfect, flavourful, crispy and golden biscotti. Even better than those served in the posh coffee shops. No Knead Beer Bread

Very easy to make - and very quick, too. The result was lovely, tasty bread; sweet with a hint of tanginess from the beer (I used dark bitter beer as that was what I had). The texture was good and it had a nice crisp crust. I followed the recipe as given but with just a bit less melted butter on top. I'm sure I will be making it again, and often!

Sourdough Starter - Wheat

I made this a couple of weeks ago but used half quantities throughout so as not to end up with so much starter. It worked perfectly and has produced super bread. No yeast is needed for this starter or for the bread. This is so good I shall be using it and passing it on to friends as well. Thank you.

Russian Black Bread

Lovely bread. Dark and flavousome with a little 'tang' from the vinegar and seeds. The texture was light yet chewy. Perfect with a wholesome soup to provide a complete meal. Will definitely be making this many times in the future. Thanks for posting.

Balsamic Brown Rice Salad

I love brown rice and liked this when made as directed - but to be really good it needed a bit more punch. I added a little chopped ginger and garlic and it was then worth 5 stars. A lovely, good-looking salad.

Baba Ghanoush

After reading the reviews I made this with half the amount of lemon juice and tahini and it was very good. I have since made it with the stated amount of lemon and tahini but using 3 eggplants. I roast them as directed along with the garlic which is definitely better cooked. The result is delicious. But the recipe as given is way too heavy on lemon and tahini so I can only give it 3 stars.

Lentil Soup with Lemon

I have made this several times now and it is excellent - unusual and refreshing, yet still filling. The only change I make is adding a little extra lemon juice and omitting the drizzle of olive oil when serving. A little shredded lemon zest on top when serving looks great. Now I always make double amounts and it freezes well - although it is usually eaten up by the next day.

Baked Eggplant Parmesan

Baking the eggplant meant it was crispy but did not suck up the oil as it had when I tried a different recipe which called for frying. It turned out actually better than some restaurant versions. Using a bought ragu sauce certainly makes it quick and easy to prepare. This will be a frequent dinner in this house! Thank you.

British Bread Pudding

This is the classic recipe for British bread pudding. You can use different kinds of bread or fruit as you have available. Great hot with custard and even better cold. It is meant to be quite dense and heavy and not at all like cake. Also, it is not bread and butter pudding which has similar ingredients. NOTE FOR DARVULYA: This not at all like plum pudding which is VERY dark and rich, contains suet, and is steamed, like Christmas pudding. I have been using this recipe for years (long before allrecipes came along and it is great.
