Pesto Chicken Florentine

Slow Cooker Italian Beef

Best Italian beef I've ever had...can't wait to make it again! Although I could not find a 16oz jar of pepperoncini, the 12oz worked great. I also added about 1/4 cup water to break up the saltiness.

Vanilla Crepes

This was my first time making crepes and they turned out GREAT! It took a little practice to get the hang of how much oil to use, how much batter to use, and the best time to flip...but since the recipe makes so many, it's easy to practice. I used this site's recipe for "Creamy Dip for Fruit" and spread a bit of that and some fresh blueberries inside each crepe...very good!

Cheesy Brat Stew for the Slow Cooker

This is my husband's new favorite food. The only thing I've had difficulty with is the green beans--no matter how much I stir, they always sink to the bottom of the crock pot and stick to the sides. Next time I'll add them at the end or omit them.

Ham and Cheese Breakfast Quiche

I made this the morning of New Years Day for some overnight houseguests, all of whom asked me for the recipe to take home. I used some bacon as well as the ham, and I used only enough hash browns to coat the entire pie dish. I also salted/peppered the hash browns before baking the first time and it smelled and tasted great.

Quick and Easy Mexican Chicken

This recipe is great! I didn't have a whole cup of salsa on hand so I used probably 1/3 cup along with a little Cholula hot sauce. I also used reduced fat cheddar...and less of it. So very delicious, and my (picky) husband loved it, too!

Tuscan Soup

I cannot tell you enough how wonderful this soup is!! I didn't even have all the ingredients on hand (was short on chicken broth, so I used 2.5c broth and 2.5c water, then threw in two bouillon cubes; didn't have potatoes so substituted frozen broccoli florets). I also used mild Italian sausage, sprinkled it with a bit of red pepper, and it was perfect. As per other reviewers' suggestions, I added a full cup of evaporated milk to thicken the broth a bit. Simply delicious!! Full of all kinds of flavors! It did not even require any additional salt or pepper (likely due to the fact that the bouillon cubes contain quite a bit of salt). Simply delicious, and SUPER easy to make...anyone could make this delicious dish!

Cream of Asparagus Soup I

I have been searching for a good asparagus soup recipe for a couple of years...this one wins!! I feel like the slight changes I made added a ton of extra flavor. The changes were: I used 1/2 butter and 1/2 olive oil for cooking onions and celery, used 4 bouillon cubes and a tad extra water, added 3 pressed cloves of garlic, and went with a couple dashes soy sauce, dash of red (cayenne) pepper, dash of seasoning salt, and about 1/4tsp adobo seasoning. So delicious! We have been eating it nonstop since I made it...thank you!

Merritt's Butternut Squash Gratin

This is an amazing recipe. Butternut squash prepared in more traditional ways makes me gag, but this dish has a savory taste that is comforting and delicious. I used about half the cheese recommended (3/4 sharp cheddar, 1/4 shaved parmesan) and it tasted wonderful. Can't wait to make this for Thanksgiving!
