Merritt's Butternut Squash Gratin
This is an amazing recipe. Butternut squash prepared in more traditional ways makes me gag, but this dish has a savory taste that is comforting and delicious. I used about half the cheese recommended (3/4 sharp cheddar, 1/4 shaved parmesan) and it tasted wonderful. Can't wait to make this for Thanksgiving!

Cream of Asparagus Soup I
I have been searching for a good asparagus soup recipe for a couple of years...this one wins!! I feel like the slight changes I made added a ton of extra flavor. The changes were: I used 1/2 butter and 1/2 olive oil for cooking onions and celery, used 4 bouillon cubes and a tad extra water, added 3 pressed cloves of garlic, and went with a couple dashes soy sauce, dash of red (cayenne) pepper, dash of seasoning salt, and about 1/4tsp adobo seasoning. So delicious! We have been eating it nonstop since I made it...thank you!

Tuscan Soup
I cannot tell you enough how wonderful this soup is!! I didn't even have all the ingredients on hand (was short on chicken broth, so I used 2.5c broth and 2.5c water, then threw in two bouillon cubes; didn't have potatoes so substituted frozen broccoli florets). I also used mild Italian sausage, sprinkled it with a bit of red pepper, and it was perfect. As per other reviewers' suggestions, I added a full cup of evaporated milk to thicken the broth a bit. Simply delicious!! Full of all kinds of flavors! It did not even require any additional salt or pepper (likely due to the fact that the bouillon cubes contain quite a bit of salt). Simply delicious, and SUPER easy to make...anyone could make this delicious dish!
