Spaghetti Sauce with Ground Beef

I followed the recipe minus the green pepper, and I added a pinch of salt to cut the acidity of the tomatoes. I don't care for tomato pieces, and to me there were a bit too many for my taste in this sauce. Next time I will use a larger can of tomato sauce and a smaller can of diced tomatoes (what I used). Overall it's a thick, rich sauce that tastes good.

Chocolate Zucchini Bread I

This is so delicious!! I substituted cocoa powder for the chocolate chips. This bread is moist, rich, and can be eaten plain or with some strawberries and whipped cream. I love it.

No Bake Granola Bars

I no longer buy store bought granola bars because of all of the additives, so I've been experimenting with homemade granola bar recipes. This one was really good! I just made them tonight and they came together easy. My modifications: added 1 T. cinnamon, pinch of salt (to bring out the sweet flavors), and 1 T. of brown sugar in lieu of 1/2 of the honey. I omitted the cranberries. These are very peanut-buttery and the chocolate chips are a nice balance to that sweetness. I will definitely be saving this recipe! I love that you can add different ingredients (dried fruit, different nuts, etc.)

Creamy Au Gratin Potatoes

These potatoes were delicious. I have struggled to make good homemade scalloped potatoes, but these will be my go-to recipe. I do agree with others who said that the onions sliced weren't very appealing. My family are not big onion fans so they did not like the slices. I like that you can experiment with different cheeses. I will definitely make again!

Zippy Shepherd's Pie

This was okay. I followed the recipe exactly except for curry powder. My chief complaint is that it was runny and didn't thicken despite the use of cornstarch. It was "sloppy" when I scooped it out--everything ran all over the plate. Flavor was good. I made this for my husband and in-laws and no one seemed to care for it--no seconds for anyone. I probably won't make again.

Pork Chops with Delicious Gravy

This was really good. My family loved the gravy. Some minor tweaks: I doubled the recipe (as I read the recipe initially I knew it wouldn't make enough gravy). I also added some beef stock and minced garlic. The pork chops were tender and flavorful. Served over mashed potatoes and noodles. YUMMY!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was delicious! My daughter has Celiac disease, so gluten-free foods for her are a must. She didn't know what was in the recipe until after she tasted it, and she absolutely loved it. Our whole family did, and we didn't miss the flour at all. Moist, easy to make, and great with a scoop of ice cream! Will definitely make again--may try doubling the recipe and make a bundt or two-layer cake.

Easy Lemon Cookies

These are so delicious and easy to make!!! I just made them today, and they are tasty. Taste just like lemon bars, but in cookie form. I doubled the lemon extract to 2 teaspoons based on some other reviewers thoughts on them not tasting lemony enough. I just sampled one and they came out perfect!

Chicken Florentine Casserole

This recipe is delicious. The first time I made it, I did use bacon as the recipe directs, but my family didn't care for the bacon. Ever since then I have omitted it. Also, I double the sauce (one extra can of mushroom and another 1/2 cup of half and half) to have extra sauce to pour over pasta. I also modify the recipe by browning the chicken in olive oil vs. baking in oven. We really love this recipe and it is a nice alternative to Chicken Alfredo. YUM!!
