Tom Ka Gai (Coconut Chicken Soup)

Reviewed: Dec. 25, 2002
This is fantastic! I added a 3rd can of coconut milk, 1/3 of a can of coconut cream & doubled the chicken. VERY quick & easy. It tastes just like the soup we used to drive an hour to order in our favorite Thai restaurant. Spicy & authentic. For each new guest I've served it to I've had to make a copy of this recipe. This is the best soup in my collection!

French Tourtiere

Reviewed: Aug. 27, 2002
This was easy & a big hit with the kids, but the adults found it typical of traditional European country-fare: filling, but a bit boring. It was tasty, but a little dry. I'll be serving it on cold winter days........maybe with a gavy or sauce on the side!

This was an easy, successful foray into breadmaking! It was delicious! I didn't have sea salt so I just used Kosher salt & added a little to the top before baking-it was just right! I'd make this for company!

Basil Chicken over Angel Hair

Reviewed: Aug. 23, 2002
Very classic summer fare! Light & delicious with our fresh tomatos & basil, but I would add a little more basil than called for. Very good re-warmed the next day too!

Chicken In a Tarragon Sauce

Reviewed: Aug. 23, 2002
Very easy & fragrant chicken recipe. I would use a different white wine tho-I used a sauterne & it didn't lend itself to the subleties of this dish. My picky son asks for this dish frequently!

Fettucine in Creamy Mushroom and Sage Sauce

Reviewed: Aug. 23, 2002
This was easy & very tasty. I had trouble finding oyster mushrooms & substituted portabellas-made the sauce very dark & rich. I also used 1/2 & 1/2 instead of cream to reduce the fat. It was a wonderful way to use my fresh sage & I'd serve it to company!

Chile Basil Sesame Chicken

Reviewed: Aug. 23, 2002
This Thai inspired flavor makes a very EASY, yet impressive dish. My family asks for it weekly since their first taste & I have picky eaters! I've served it with rice & broccoli (I've also chopped it & stirred it all together for a single dish). It's also a good dish for company.
