Bramblett's Vegetable Stock

This recipe worked well for me. This was my first try at making my own Veggie Stock. I wanted a higher yield of broth so I doubled the water and added more salt, it seemed to turned out great. I also didn't want to waste the strained veggies, so I pureed them with a little added broth and it came out perfectly for baby food, I might even add a few more ingredients and make a creamy vegetable soup out of it... we will see!

Sweet Potato Casserole II

I like the best of both worlds (fun, yet sophisticated) so I went ahead and made this recipe w/both marshmallow and sugar crumb topping... it was perfect. I also followed the advice of many on here: increased vanilla to 1tsp & added 1/2 tsp of nutmeg & salt, used evap. milk & all brown sugar and (because I am a busy mom of 4) used 2-40oz cans of sweet potatoes... one of these days I will make this w/the real deal. I have made this w/pecans & without... I prefer without (which suprises me, I usually love them). I think in the future I will attempt to add oatmeal to the crumb topping. This recipe is always a hit!

Soft Caramel Corn

This is the caramel corn of my childhood... soft and gooey! I used an air popper & loved the suggestion to lightly salt the pop corn, it adds a great sweet and salty combo. I was out of corn syrup & have been trying to use Agave Syrup in place of my sweetners lately anyways, so I decided to give it a go and it came out perfectly without affecting the flavor or texture. I have a carnival birthday party coming up so I made and wrapped up a few popcorn balls to see how long the freshness lasts so I can plan for my upcoming event... will post results in a few days.

Chocolate Chip Crispies

Great recipe, traditionally instead of mixing in the chocolate chips, we have always sprinkled them on the top of the finished treats, placed it in the oven on 350 just long enough to soften & then spread across the top. For a low glycemic option replace the corn syrup & sugar w/agave nectar. It might take a little more time to set up (and will be a little softer than the original recipe, but will still hold shape), but the flavor is not at all lost & I feel much better about giving it to the kids!

To Die For Blueberry Muffins

I can't say it any better, these muffins are great! My daughter said, "the best muffins I ever had!". I followed the recipe exactly with the exception that I used only brown sugar & I only had frozen blueberries (which I thawed first). Still WONDERFUL and super easy! Thanks!
