Zucchini Artichoke Summer Salad

This "salad" was amazing. I agree that it's more of a main dish, and I also added garlic (just a given in my household). I also left out the beans cause the kids don't care for them. I tried it by itself and highly recommend trying this. Afterwards we served the leftovers wrapped in a warmed pita with some creamy dressing. Very good as a wrap too. Will make this again and again :)

Thai Style Shrimp

If you're expecting a spicy dish....this is not it. The flavours blend and balance very well together. The only thing I changed was to make the sauce and reduce it BEFORE adding the shrimp. Shrimp are cooked as soon as they are pink and shouldn't be simmered too long or they turn rubbery.

Byrdhouse Mushroom Barley Pilaf

This reminded me of an appetizer I had at an upscale restaurant in Jasper Alberta. It was quail with barley pilaff. This is REALLY good and well worth the effort :D I'm so glad you posted this. I can't wait to serve it again.

Chicken and Bacon Chowder

Very good comfort food. Tasty and filling. After reading other reviews, I also decided to veto the salt. Very glad I did as it was more than salty enough. Next time I make this I'll use reduced sodium chicken broth, and reduced sodium cream of mushroom soup. Should be perfect then :)

Sun-Dried Tomato Dip

Really, really good! I followed this exactly. The flavours were extremely well balanced, and it went equally well with veggies and chips, which I find isn't usually the case. The bowl was practically licked clean lol. I added just enough Franks hot sauce to give it a bit of zip since there wasn't an amount listed...about a teaspoon (didn't measure, just shook it in). Was great! I served this with blanched asparagus, red pepper strips, and pita chips.

No Bake Lime Mousse Torte

This was a hit! Great recipe. I followed it exactly except that I baked the crust at 375 for 7 minutes so that it would hold together better, and it came out light, fluffy, and very awesome flavour :D Was the favourite dessert at my Thanksgiving supper party.

Pumpkin Ginger Cupcakes

Completely fabulous! I followed the recipe exactly and they were moist and perfectly spiced. I frosted them with the Allspice Cream Cheese Frosting recipe from this site. Great combination. I found the crystallized ginger in the Asian aisle at my grocery store.

Allspice Cream Cheese Frosting

Amazing! I also upped the cream cheese to 8oz, but kept the powdered sugar at 4 cups, and no one here thought it was too sweet at all. With the increased cream cheese I didn't feel it needed any milk. Would have given it 5 stars if it had originally read 8oz cream cheese. I used this to frost the Pumpkin Ginger Cupcakes from this site...was a hit at my Thanksgiving supper :)

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was surprisingly good...I say surprising cause I only tried it for a gluten free friend, and no one could believe they were eating cake made from beans lol. It has a dense, rich texture and a nice chocolate flavour. I topped it with a mint cream cheese frosting.

Coconut Shrimp I

I was a bit confused when I made this. The video instructions differ from the written instructions, but I combined them and it was an amazing hit. I made the beer batter as per the written instructions, but added a bit of flour to the coconut as per the video instructions. The batter was perfect. I had no problems with the coconut sticking. It was a fabulous flavour. Thanks for a great recipe :D

Buffalo Shrimp

Wow!! My sweetheart and I are sticklers for trying a recipe AS WRITTEN the first time and then playing with it when we don't like something. I was pretty nervous about the amount of spice in this one, but it sounded tasty so we did it....holy &$@#! This is SPICY! But a GOOD spicy. Not a burn your taste buds off spicy. There was so much amazing flavour, that even though we were laughing and reaching for the beer it was just soooo good we couldn't stop eating them! Will make again and again!!

Easy Slow Cooker Ham

I really loved the scent of my house while this ham was cooking...and if you're looking for a great air freshener this is it lol. As for flavour...a little too gingerbread for my taste. Was ok, but won't be repeating....Update: I lied. I repeated this one, and adjusted the seasonings, also switched the liquid to pineapple juice, was great then. I really, really, liked having a crockpot ham, so couldn't give up on this one. Play around till you get the taste you want, but the method is wonderful.

Bubba's Jambalaya

This is still my favourite jambalaya recipe!! I follow it almost exactly (we're meat lovers so we just about double those), and it turns out perfect every time :) Also addicted to garlic so added plenty of minced fresh to the vegetable step. Awesome recipe, thanks!! :D
