Cornmeal Strawberry Cake

This delicious, relatively healthy cake was easy to make and, oh so good! I used turbinado sugar instead of white sugar, frozen strawberries, and added two heaping tablespoons of applesauce since other reviews said the cake was a bit dry. With the applesauce added, it was perfectly moist.

Whole Wheat Blueberry Pancakes

Really good! Instead of artificial sweetener, I used 2 T. of brown sugar. Since some of the reviews said the pancakes turned out dry, I added 2 T. of unsweetened applesauce, so they turned out moist for me. Perfect with real maple syrup!

Broiled Tilapia Parmesan

Not exactly a low-calorie/fat dish, but oh so good! It was a nice change to have a rich sauce atop the tilapia (which we normally just add spices to rather than cheese, butter, etc.). The time-saving element of this dish was a definite plus! We will likely cook this one again.

Spicy Bok Choy in Garlic Sauce

Very good! This side dish has a nice, subtle flavor and a pleasant presentation. I did not have all of the ingredients available at the time, (i.e. sesame oil, fresh ginger, oyster sauce), so I doubled the amount of canola oil that I used and used 1 1/2 times the amount of soy sauce. I look forward to trying this recipe again with the ingredients that I did not have this time around and imagine that the added ingredients will lend more sweetness (from the sesame oil and oyster sauce) and a little spicy kick (from the ginger) to this dish. Yummy!

Burgundy Pork Tenderloin

The pork was very tender and perfectly cooked and the presentation was nice. However, while it was good and we enjoyed it, the sauce was a little heavy and the overall end-product seemed a bit generic. I am glad I tried the recipe. It was well-received in general, but it lacked that extra something that would persuade me to cook it again.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Very, very good! The only two things that I altered from the recipe: substituted Canola oil for the Vegetable oil and used fresh instead of frozen strawberries. I also use Canola oil to "grease" the muffin tins. As has been stated already, these muffins freeze well. They are also moist and flavorful. I have had two other taste testers, and both of them give a hearty thumbs up!
