Creamy Tomato Tuna Penne Pasta

I didn't have any soup, so I used homemade chicken stock, a little can of tomato paste and heavy cream with a dash of onion powder. No tarragon, so I used about 1/4 c. fresh basil from the garden instead. It had so much flavor! Don't skip the anchovy, it wasn't fishy at all.

Black Bean and Corn Salad II

SO good! I made this all last summer and can't wait to make it again when the veggies are in season. Basically, the "dressing" is so versatile, you can switch up the veggies to what you have in the house. I used equal parts lime and evoo for a tangier dressing.

Mushroom Chicken Piccata

Really good! Skipped dipping the chicken in egg/milk mixture, and added capers (fried for a minute) like other reviewers. Will make again!
