Easy, Eggless Strawberry Ice Cream

Made it in an electric turning ice-cream maker (alternating ice and salt), and it was still turning after 4 hours. We finally stopped it since we were tired of waiting for it to freeze. It was too "foamy" and not ice-cream consistency at all. We'll go back to the traditional recipes.

Strawberry Refrigerator Cake

Yummy & refreshing dessert for the summertime. I also used a white-cake, instead of strawberry. I poked my holes in the cake, still hot right out of the oven, and it looked like a big mess, but turned out better than I expected when served. I would probably wait til the cake cooled a bit before making the holes again. I also used (1) 16oz container of frozen strawberries in juice with about 2-cups of fresh strawberries (I had cut up & sprinkled with sugar & let sit overnight in the fridge)... poured them in the blender with the container of strawberries & juice I thawed out & blended, but still leaving chunks of strawberries. There was a good bit of strawberry pieces on top of the cake after I poured it on top, but I spread them out & refrigerated the cake overnight, and then "frosted" the cake the next day, and there was no mess with spreading the topping. I also used the Cheesecake flavor pudding mix and used an entire 8oz container of whipped topping instead of 2-cups, and it turned out fine. Everyone really enjoyed the cake, it was a hit!!

Seafood Pasta Salad

Very good for a pasta salad. I did substitue a pound of frozen salad shrimp for the (because I already had the shrimp on hand). I also added about a cup of halved grape-tomatoes. I did think it needed some extra spices... I didn't have any Old Bay (as some reviewers added) so I added some celery salt, garlic powder & paprika and a splash of lemon juice. Overall a yummy pasta salad I served for lunch, with crackers.

Easy Mexican Casserole

Very easy & yummy. BUT I also made some modifications after reviewing the other reviews. I did add a packet of taco seasoning to the ground beef with a 1/2 c of water and also some chopped onion. I used black beans instead of chili beans, and for the sour cream mixture I used 1-1/2 c of sour cream & 1/2 c of ranch dressing, just to give it a little zing & the sour cream seemed not to be so "gloppy" after being cooked by adding the ranch, also. I also chopped some fresh cilantro & sprinkled in the layers & also on top for some garnish. I used a Mexican blend shredded cheese (because that's what I like). The crushed tortilla chips were okay on the first serving, but with leftovers they turned mushy...But I had some partial bags of chips I wanted to get rid of, so that's what I used as the recipe called for. It might be better with just using whole corn or flour tortillas next time.

Sausage Balls II

I also tweeked this recipe, after reading some of the reviews. I did let the cheese & sausage come up to room temp, and it was MUCH easier to mix. Also used my Kitchenaid stand mixer and let it do all the work, took just a minute to completely mix up. I also added a 1/4-cup of diced onion, and a sprinkle of garlic powder... cut the biscuit mix down to 1-cup, and upped the cheese to 1-1/2 cup. Also baked them 25-min, and they came out perfect, nice and moist & were gobbled up in no time!!
