Black Bean and Corn Quesadillas
I have three teenagers, one of whom is a committed vegetarian. This recipe received rave reviews from all, including the parents and the non-veggies, and I love it because it's so easy she can make it even for herself for a healthy and tasty dinner. I served it with salsa, sour cream, and homemade guac to up the nutrition as well.

Belgian Waffles
These are without question the finest Belgian waffles I have ever had. I mixed them up the evening before and refrigerated overnight. Pulled them out bright And early to give the yeast time to warm up and start working again before I baked them. I have tried many recipes including the one that came with my good Belgian waffler and this surpasses them all.
